    Hi~
    I was wondering if there was a list of vegetables appropriate for Rung 1, or is it the exact same as induction? I want to make sure that I introduce everything that I plan on eating without leaving anything out! Thanks!

    Hi,
    It's the same exact salad veggies and other veggies as in Induction. You're adding 5 more grams of carbs from the veggie lists for Rung 1.
    Vegetables
    You can have two to three cups per day of: + 5 more grams of Veggies for Rung 1 Veggies

    alfalfa sprouts
    daikon
    mushrooms
    arugula
    endive
    parsley
    bok choy
    escarole
    peppers
    celery
    fennel
    radicchio
    chicory
    jicama
    radishes
    chives
    lettuce
    romaine lettuce
    cucumber
    moche
    sorrel
    These salad vegetables are high in phytonutrients and provide a good source of fiber.

    Other Vegetables
    You can have one cup per day of these veggies if salad does not exceed two cups. The following vegetables are slightly higher in carbohydrate content than the salad vegetables:

    artichoke
    celery root
    pumpkin
    artichoke hearts
    rhubarb
    asparagus
    chard
    sauerkraut
    bamboo shoots
    collard greens
    scallions
    dandelion
    snow peas
    bean sprouts
    dandelion greens
    spaghetti squash
    beet greens
    eggplant
    spinach
    broccoli
    hearts of palm
    string or wax beans
    broccoli rabe
    kale
    summer squash
    brussels
    kohlrabi
    tomato
    bean sprouts
    leeks
    turnips
    cabbage
    okra
    water chestnuts
    cauliflower
    onion
    zucchini
    If a vegetable, such as spinach or tomato, cooks down significantly, it must be measured raw so as not to underestimate its carb count.

      That's the list I was using! I was already eating the ones off of there that I usually eat, so I upped the amount to 5 additional carbs. Since I'm not really adding a new food, would it be OK to move up a rung after just 1 week? Thanks!

        How much weight do you need to lose? It's suggested that you spend at least 2 weeks at each rung. Because you won't be introducing any new veggies at Rung 1, you should be able to move up to Rung 2 Dairy after 1 week . Just realize that it may cause your weightloss to slow a bit as you're adding on your 5 gram increments at each rung. I do suggest though that you spend a longer time with dairy. See how your body reacts to the fresh dairy as you're reintoducing it.

            During Rung 1, I also tried out low carb veggies (5 net carbs or less per cup) that weren't on the list, like watercress and some Asian vegetables, including the seaweed used for sushi wrappers. I stuck to the leafy green veggies, though.
