  • Finally found jicama!

    I had read a few posts about this and hadn't been able to find it. I've been getting bored with the regular veggies I was eating and thought it was time I tried something new. I'm wanting to try and make fried jicama, raw with dip, and jicama hashbrowns. Any other recipes I should make sure to try??

    I love jicama in my salads. I wonder how it would taste fried like french fries ......hmmmmm. I'm craving french fries!

        Okay okay - so I am in love with this. I found it at Safeway. Anyway, last night I was so excited about it, I went home and made 3 different things - french fries, chips, and hashbrowns. They were all GREAT! I think with the hashbrowns though, next time, I'll squeeze the moisture out before cooking.

        For the french fries, I cut into small sticks, sprinkled a little seasoned salt on them, and plopped them into some heated up peanut oil in a small pot on the stove. I cooked for about 2 to 3 mins (til they were browning) and then set them out.

        The chips I did the same way but instead just cut them really thin. They shrink up quite a bit, so the bigger the slice you can make, the better. And I noticed that when they first come out, they aren't that crunchy but if you let them sit a bit, they crunch up.

        AND for the hashbrowns, I used my cheese grater to shred it, combined with a little salt and onion powder, and then sprinkled a little patty in a little oil in a skillet.

        They were all yummo! AND the cool thing is that my husband (who is a meat and 'tators man) liked it too!

          i guess i need to Google what a jicama is, i have never heard of it.

            Lindsayanne, thank you so much for the great ideas. I will be sure to try your suggested recipes soon. Mmmmmm.... I am looking forward to the french fries

              i love jicama also.....i make hashbrowns and french fries with them often. here's another recipe to try, it's from linda's low carb site. if you like fried apples, you'll love this. when i make mine though, i don't microwave them, i actually fry them up in a skillet just like if i were making fried apples. also, when i make it, i omit the molasses. this is an excellent dessert.

                When I see threads like this I wish we could get jicama over here in UK I did find it is also called 'yam bean' and 'konyak' but still can't find anyone selling it in UK!
                Wondering how to get 'most' of your net carbs from your induction veggies?

                  The only thing I don't like about jicama is the trouble I have finding a good one. They can look fine on the outside and then, when you cut them open, have a whole bunch of dark brown spots. Yuck!

                    Linda's lowcarb site has a recipe for jicama "apples". Linda's Low Carb Menus & Recipes

                    I like them raw. They have a light clean taste and are nice and juicy. Like a less sweet watery apple.

                        However so far no luck

                        I did once find a UK company whose website stated they did import it but when contacted they said I would have to order crates of it for them to start to carry it as it doesnt last long before going off.

                          I can't get them to soften at all. When I made french fries with them they tasted like burnt raw potatos.
