  • Baked some bread today

    I am on the final rung so I thought I would try some baking
    I baked a wheat gluten bread (with oats, flax and soy added in) in my bread machine. Turned out pretty good. About 4 carbs per slice.



    Startdate: November 18, 2007. Female 5'2"

    May Challenges 2010
    Push-ups: 450/800
    Abs: 850/1900
    Squats: 650/1200
    Lunges: 500/1000
    Strength: 490/1200
    Running: 50/100 km

      It was very good. A little bit odd to eat something bread like again. So it tasted somewhat illegal

        Wow - bread is something I miss a lot and can't wait to get to that rung. Looks delicious!

          And it is great that one slice worked out to around the rung addition of 5 net carbs, makes calculating easier!
          Wondering how to get 'most' of your net carbs from your induction veggies?

            Elizellen that is so true - it works out well for adding at the rung.
            Skeptica to tell you the truth I am not sure about when to eat bread anymore. When I started Atkins a year ago I was a huge bread eater. I loved the thing. Several of my meals consisted of bread some days. And I was not sure I was going to make it on Atkins without bread but I agrede with myself to try it for fourteen days. Of course that loss under induction gives plenty of motivation to keep going.
            Now I cannot remember why I needed bread so much - I am perfectly happy with my menu without it.

                Congrats on your loss! The bread looks lovel. Can you share the recipe?? I love that one serving is 4carbs. Thats exactly what I need when i get there.

                  Passing up bread is hard for me - I used to chow it down plain, no butter or anything!

                    There are several recipes on the internet of these wheat gluten breads.
                    The one I used went like this

                    1 1/4 cup warm water
                    1 tablespoon olive oil
                    1/4 tsp salt
                    1 egg
                    1 cup vital wheat gluten flour
                    1/2 cup ground flax
                    1/4 cup oat flour (I put my oats in the food processor)
                    1/4 cup soy flour
                    1 tablespoon Splenda
                    1/2 tablespoon active dry yeast

                    I just add them in that order to the bread machine and bake on whole wheat setting.
                    Mine is now safely in the freezer so I can bring out a slice now and then.

                      Thank you! I was shopping yesterday and I noticed in the bread isle, by the artisan brought in breads a brand that caught my eye. I'll have to get the name b/c I didn't buy any. but it said "safe for diabetics, Low carb" It had practically identical ingredients and was 3 carbs per slice. It felt lovely! Definately a motivator for me. But I love to bake and cook - so I will try your recipe. Nothing like warm bread out of the oven with butter on it!

                        Lucky you. I have looked for low carb breads around here but not found any. It is nice to know that it will be there when you are ready for it.

                            Not sure where in Canada you are, but here I've found Dempsters Bodywise to be the lowest carb bread for OWL. It's 6/7 g's per slice. I've seen it at Walmart and Loblaws. Orowheat used to have one called 'Fibre Counting' as well that was 6g's per slice, haven't seen that lately but one to watch out for.

                            In Maintenance, I eat Stonemill Bakery's (it's a Canadian company) 3 grain sprouted grains bread. It's 10g's per slice, all natural..and low glycemic. I love the stuff!

                            Keep in mind there are strict labelling laws here now that limits what they are allowed to call 'low carb' so it's unlikely you'll see any products labelled as such. You'll need to read your labels and ingredients lists to find them.

                              Thanks Jen for those suggestions. I look at breads in the grocery stores but so far nothing but thanks for the brand suggestions,
                              I am in Saskatchewan btw.
