  • Confused about Veggies and can't get to 25 g

Okay, I have read the book and it says to add in 5 g of carbs via vegetables on Rung 1. Do I have to continue to eat 2 cups of salad, 1 cup vegetables plus more vegetables. Don't get me wrong, I like vegetables but I guess I'm just tired of salad everyday, I would prefer more cooked vegetables, so can I cut back on the salad if I up my other vegetables?

Also, does anyone else have a hard time getting to 25 g per day?

    Thanks,
    Courtney

*****Nevermind, I found the answer. I guess I should just realize that salad veggies does not equal lettuce, there are other veggies that I like that are on that list that have a variety of ways to be enjoyed!
I WILL learn to feel comfortable in my own body again!

You are right in assuming rung 1 should mean eating your 3 cups of induction veggies plus 5 net carbs more

As for trying to get 25 g of net carbs on rung 1, this would depend on how many net carbs you are averaging on induction. If you had only eaten lettuce as your veg (and you have been getting 'most' of your net carbs from your veggies as Dr Atkins said) then you probably would hardly have been eating 5 net carbs, so your OWL rung total would be 10. Then for rung 2 (or an extra rung 1 addition if you want more veg) aim for 15 net carbs and so on.

Just add the 5 net carbs to whatever number you ate on induction.

Don't forget you can cook many of the 'salad veggies' too! For anyone who has problems getting even their 3 cups on induction, cooking will reduce the size of the portion to a more manageable quantity.

1 cup of sliced red peppers sauteed in butter reduces down to a decent sized 'dollop' to top meat with but would not mean eating such a large amount in volume as the raw peppers would be.

Same with any leafy veggies or onions.
Wondering how to get 'most' of your net carbs from your induction veggies?

Bacon fried cabbage, eh? How would you cook that? I am starting on rung one on Monday and I already am not getting quite enough veggies. I just cannot cook so well. It never tastes as good as when hubby does it. (He is too busy this week to help!) So, I end up eating a lot of salad.

Might I also suggest roasted cabbage? I got it from a mustard pork recipe on Linda's Low carb website and it is delicious..and easy. Simply cut the cabbage into about 1/2 inch thick slices (If you cut towards that stem that holds the cabbage together the pieces stay together), then melt 4 tbsp of butter and pour it over both sides of the cabbage pieces, add salt and pepper. Put in over at 450C and cook for 20-25 mins.

            Delicious.

Another great way to cook cabbage is cut the cabbage in 1/4's & cut out the core. Put on a piece of foil add a piece of butter some salt & pepper. Wrap up the foil & pop in the oven for an hour. Excellent!

Fry some bacon & using some of the grease saute some shredded cabbage. Cook until tender. Excellent!

Re: Confused about Veggies and can't get to 25 g

Bacon fried cabbage is very simple (I am into simple)
                  Fry some bacon
Add a bit of onion (if you like onions)
Once bacon and onions are done remove them. Add shredded cabbage to the bacon fat. Stir and cook over low temperature for about 20 minutes (stirring once in a while) add crumbled bacon and onions back to bacon at the end. Season with some pepper. It is pretty yummy.
