  • Focusing on VEGGIES

    I am just starting OWL 1. Will be adding cherry tomatoes in every other day this week, then every day next week, then will branch out into adding/substituting other veggies.

    So far, I was so concerned about controlling hunger that my menu is top heavy with cream, cream cheese and cheese, and I rarely got enough veggies in per day.

    I also noticed that I need the veggies before I exercise, otherwise I tend to be drained by the bike riding.

    So the last two days I have made breakfast egg crepes stuffed with veggies. Yesterday it was mushrooms, peppers and green onions. Today it was 1/2 c. of leftover green beans.

    I can't say the green beans were great that way, but I feel so good that I am finally concentrating on making sure I get those veggies in.

    Good for you. The majority of our daily carbs during Induction were to be from veggies. And as you progress through your Atkins, you'll be eating more vegetables than what the USDA recommends daily.

      Well doen on getting started on the main weightloss phase of Atkins

      My favourite way of eating green beans that are leftover from another meal is to fry them in butter to crisp them up.
      Wondering how to get 'most' of your net carbs from your induction veggies?

        My favourite way of eating green beans that are leftover from another meal is to fry them in butter to crisp them up.
        Sounds almost decadent!! YUM!

        I fixed Linda's taco salad for dinner tonight. DH loved it, too, so we have another favorite to add to our files.

          Hummmmm Green bean Omelet, for some reason I don't think thats going to make Linda's recipe list.
          Asparagus season is coming up, makes a great quiche.

            I think tomorrow I'll make up a batch of individual quiches. I haven't done that yet, and it would really be a nice change! I have the ingredients for several different kinds.

            Yeah, the green beans lacked a bit of culinary appeal!

                Actually you could chop them into small pieces and scatter them into a quiche. I often do that with any cooked veg that I don't want to use in other recipes.
