  • Chocolate extract

    I've seen several recipes that use this - I can find two suppliers in the UK. The ingredients on one website say Chocolate Extract, made with cocoa extract and cocoa powder Contains alcohol (37%) and on the other site - Water, Alcohol, Chocolate Extract. Alcohol: 45% by volume.

    Does the alcohol mean it will have to wait until rung 5? Or, as you only use a teaspoon in a recipe, is it rung 3 - for the nuts and seeds rung? As it is such a small quantity that you use could it be used earlier than that?

    On a similar note (chocolate!) can anyone tell me what the chocolate syrups on the lowcarbmegastore website are like - the WF chocolate, and the two Da Vinci oones?

    This thread got lost in the crowd. Oops.

    Cocoa extract is processed in the same way as vanilla extract, so they are both allowed even during Induction as long as you use them to "spice up" your foods. I think the mock danish ("legal" for Induction) uses something like 1/2 teaspoon per serving. With an average of 40% alcohol, that's 1 ml of alcohol.

    About the syrups. I don't know the answer, but I'll ask someone else for help.

      I have ordered the davinci caramel, pancake and ameretto syrups from lowcarbmegastore. I have never tried any of the chocolate ones so I am sorry but I can't tell you what they're like. Out of the three I have bought, I only like the caramel one. If ever I have used chocolate, I would use green and blacks organic cocoa powder or Lindt 85% cocoa chocolate bar. I have never used chocolate syrup.

        Thanks, both of you - I am planning on an online shopping spree - probably after the end of the month (pay-day of course!) In the meantime I have to be content with drooling over the websites (it really does mess up your keyboard though!)
