  • Kombucha on rung 5?

    I'm still in induction and a long way off from rung 5 but I was thinking today about how I miss the power of kombucha:

    Millennium - Kombucha


    this stuff really is amazing. But I couldn't find any OWL rungs to add it back on until I thought Hey! I don't drink alcohol and so rung 5 is pretty much useless to me but kombucha has what they call a 'trace' of alcohol (from being fermented) and at 7 g. carb per serving maybe I could add in half servings? Any thoughts on this?
    I like my milk raw, my eggs pastured and my beef grass-fed.

    What are the ingredients in this stuff? If they are appropriate for OWL Rung X, then you can add it during OWL Rung X. If they are not, you cannot add it in OWL Rung 5 just because you would otherwise skip that rung. I tried a Google search on the ingredients but it didn't help too much...

      If you make it at home, it's just water, sugar, tea and kombucha colony.

      No idea as far as the bottled stuff goes.

        I have heard there is a buzz around it. So what is it? What are the advantages of it?

          I did find some info on what the 'culture' is
          Kombucha is a colony or culture of yeast and other microorganisms embedded in a pure cellulose "pancake."
          It appears people usually add sugar and tea or fruit juice to make it palatable.
          Whether it would give the 'benefits' (whatever they are) by using artificial sweetener instead of sugar I am not sure, as yeast usually needs sugar to work in baking.

          Anyone with candida problems would obviously need to avoid it
          Wondering how to get 'most' of your net carbs from your induction veggies?

            arg! And I am pretty much the definition of Candida Problem. Thanks Elizellen - in my anticipation I hadn't even factored that in.

            For others - Although there is sugar I'm not sure how much in a serving. A friend of mine who makes it uses "about a tablespoon per batch" but I don't know how many servings a batch breaks down to. I've only ever had the GT Dave's brand and I've only had the ginger flavor (there are a lot of flavors but most have fruit juice.) It might be worth asking the company how much sugar. As far as benefits I had improved digestion and really clear skin. Still, I'm hoping to have the same benefits by eliminating sugar, etc on Atkins.

            I should stop now since I really don't know that much on the subject and I was the one who came for answers!
