  • Starting OwL today!

    So far on induction I have lost around 7 lbs. I was pleased with that. I had some meat and cheese for breakfast today, it was a nice change from eggs!

    I am still struggling with my vegetables, I just don't like them very much. Why do we tire of vegetables, but not of bread or potatoes??

    How do you prepare you vegetables? You might want to jazz things up a little. Try different spices, different salad combinations, different dressings. Cooking reduces the volume of most vegetables, so you will eat less while still getting your veggies in. Did you read this sticky thread?


    Why do we tire of vegetables, but not of bread or potatoes??
    I actually love vegetables. Before Atkins I was eating maybe 3-4 slices of bread in a week, so I don't miss it. Potatoes... I don't know... I used to like baked potatoes w/ butter on them, but at this point I'm not very tempted by anything I'll get to introduce in OWL Rung 8. But I digress...

    For potatoes, did you try faux mashed potatoes? Or vegetable chips/fries? When you reach OWL Rung 3, you will be able to eat bread made from flax or almond/coconut flour.

      Congrats on your 7 lbs lost in induction... and on your move to OWL!
      You may find that after a longer time on Atkins, you come to love those veggies. I go into veggie withdrawal now, if I don't get plenty.

        Oh I love my veggies! I was so excited to move onto OWL so I could eat more of them. I'm not picky at all about my veggies, except I do not like corn very much, so that works out well for me I eat a lot of eggplant (make eggplant parmesan, better than lasange!), zucchini (zucchini pancakes, similar to a potato pancake, eat with sour cream), and spagetti squash lately (serve with spaghetti sauce!). Be creative, you might find you really start to enjoy them, and craving them

          I did read this, I guess I am just not very creative, plus I have 3 kids and my youngest is a figure skater so we are always trying to make something quickly (lots of trips back and forth to the rink).

          My staples are asparagus, broccoli, cauliflower, green beans and salad stuff. I need some creative ideas, otherwise they are boring I guess.

            I think everybody is just wired differently.

            I happen to love vegetables in just about any form. My wife, on the other hand, will eat canned green beans, canned peas and occasionally canned baby lima beans. That's it.

            I could not care less for potatoes. If I never eat another potato for the rest of my life I wouldn't have hurt feelings. Pasta is my downfall. Tonight we had company and the wife made a big bunch of spaghetti... my most favorite food in the whole world. That was tough. I made sure to treat myself to some delicious baked cod and hot wings so I would not even have room for one noodle on my plate.

              I think if you make the effort to try them new ways it will be worth it and you will grow to like them--and what a great thing to teach your kids! Veggies taste good and are good for you!

              Here are some of my favorite "quick" dishes:

              Take a carrot peeler and make "noodles" from zucchini or yellow squash and saute in a little bit of olive oil. Then stir in some basil, garlic and parmesan cheese. Yum! (You can have pesto after you reach rung three-thats even faster!) Takes five minutes.

              Cook an entire cauliflower in a microwave until really tender (8-10 mins), then puree with some chicken broth (add just enough to do the pureeing). Add cheese, a little cream, just like mashed potatoes. You can do this ahead of time for the next day if you are busy and then just warm it up!

              Toss some mushrooms in a pan with butter. Add chopped onion. Saute til lightly browned. Toss in 3-4 cups fresh spinach, still damp, and cover for a minute or two. Stir til spinach wilts down. Add a quarter cup of cream and a few ounces of shredded swiss cheese. Can also crumble a slice or two of bacon over it. Rich and tasty.

              Put green beans in boiling water for just three minutes. Cool. Cut up with red pepper chunks, sweet onion and toss with a little balsamic vinegar and oil. Add some feta or other cheese and some black olives and you have a great veggie salad. You can do the veggies ahead and assemble in a second.

              Keep cut slices of cucumber, green beans and peppers in cold water in Tupperware. Drain and serve with ranch dressing. Kids love to dip them too!

                This one sounds especially good, thanks I will try some of this.
