  • Mascarpone

    They sell mascarpone at the Saturday market near my home. I never had the stuff as I couldn't find it in Bremen, so it's a completely new food for me. Any super easy recipes that use it?

    The easiest is tiramisu--you can leave out the ladyfingers and just make the creamy part with Splenda, eggs, and cocoa and expresso or decao (strong) coffee. Excellent creamy rich dessert.

      Ditto to what Chinadoll said. If you're already on fruit, you can layer the marscarpone and the fruit for a really rich parfait.

      Also you can use it in place of cream cheese for things like cheese sauces, etc.

      A really, really rich but light luncheon or supper dish is to saute mushrooms. Cool the mixture slightly and mix it with the mascarpone (cream cheese will work too) and herbs like thyme, parsley etc. Then beat an egg or two. add a little grated parmesan cheese and cook it in a frying pan like you would a pancake. Remove the egg pancake and put the some of mushroom-mascarpone filling inside and roll it up like manicotti. Place it on a dish, pour over the rest of the filling and pop it in the microwave until it's warmed through.

        Ooh, that pancakemushroom/marscapone dish does sound yummy, Megs

          This sounds fantastic! Thanks! My "cooking intuition" is close to zero though... Do you know approx. quantities for the pancake or do you simply do it "by eye"? The mushroom-mascarpone filling I think I can figure out.

          I don't use any sweeteners other than stevia (cravings) and even stevia I haven't used any in over 5 months... so I think I'll try an unsweetened strawberry parfait. Should I try sweetening the mascarpone with some cream instead? Should it be sweetened at all?

          Kind of OT, but I was looking for regular strawberry parfait recipes online, and what is touted as a "healthy" parfait is this Strawberry Cool Whip Parfait... made with Lite Cool Whip... only 113 calories per serving! Yay!

            I use it for most things that need cream... particularly when I want a thicker cream than we can find easily here. Wonderful stuff!

              You could make the pancake in the microwave: beat one egg, add maybe a tablespoon of grated parm. Put it on a buttered plate and microwave for 1-2 minutes until the pancake is completely set. Then peel the pancake off the plate and fill it with the mushroom mixture.

              I don't think it needs a sweetener, especially if you'll use it with fruit.

                Wow! what great ideas! I use it in a lot of recipes that call for ricotta too.

                  I plan to try this with Revolution Rolls. I read on a blog that the Rolls become soggy when dipped in espresso/Cognac, but maybe they won't if I make them in the microwave...

                  Tried this... and discovered that mascarpone & strawberries are a (very bad!) trigger. I can eat strawberries alone with no problems, mascarpone is also fine, but combining the two is dangerous for me. I didn't have the courage to try it with other berries...

                  This was great and very easy to make. And no cravings afterwards.

                  I also made this: Smoked Salmon Rolls with Arugula, Mascarpone, Chives, and Capers Recipe : : Food Network, but added more lemon to it.

                  I saw a nice recipe for a savory mascarpone cheesecake with sun-dried tomatoes, but it looks a bit complicated... plus it has a bunch of carby ingredients and I don't know with what I can substitute them.                     Earlier this year when on OWL, when I felt like a creamy after dinner snack I would have a tblsp of marscapone and mix in a bit of unsweetened cocoa powder plus a drop of liquid Stevia. Wonderfully creamy, chocolatey and instant!
                    Laugh every day, even if it is at yourself.
