I know that you are supposed to up your carbs by 5 every week, going by the ladder. So after the first rung, I add 5 more veggie carbs to my plan, and then the next week I add cottage cheese in 5 carb increments, etc.

By the end of the rung, I will have a LOT of different foods I have to eat. Is that the correct way to do this? Keep all of the rungs in my diet until I hit my number? Or when I get to the dairy rung, can I cut out the extra 5 carbs in veggies and do 10 of dairy?

You do not have to go up a rung every week. Sometimes you want to try out more than one food and you stay on that rung for a while. I am a bit of slow one and after about 20 months I am still on rung 9. But you do add 5 more carbs. I actually like to add the five carbs first with a food I have already have tried so that I know if I can deal with the extra carbs before I actually try the food. So if I ate 25 carbs on rung 1 mostly with veggies I would move to eat 30 carbs mostly on veggies and then the week after eat 25 carbs mostly from veggies and 5 from cottage cheese.

But you are limited to 5 carbs. On premaintenance (where I am gliding now) you can try out 10 carbs of something. But only then.

I thought atkins was an easy diet to follow when I first read it. But the more I read the book the harder it is!! Soo complicated. Lots to remember!! BUT IT WORKS"!
