    What do you guys think of this recipe? I am on the nuts and seeds rung of OWL. Is this okay to eat?

    Atkins Recipe 2 - Low-Carb Waffles
    4 carbs per serving
    Crispy and Delicious!

    This recipe can be prepared in either a regular or Belgian-style waffle maker. When serving a lot of waffles, make them ahead and reheat by placing on a baking sheet in a 375° oven for 5-7 minutes, until crisp and hot. (Waffles freeze well, and can be reheated in the toaster for breakfast on-the-go.)


    6 oz. soy flour
    1 tablespoon baking powder
    6 teaspoons sugar substitute
    1 teaspoon salt
    ½ cup heavy cream
    2 teaspoons vanilla extract
    6 eggs
    ½ cup ice water

    1. Heat waffle iron. Whisk together flour, baking powder, sugar substitute and salt. Add cream, eggs, extract and ice water; batter will be stiff. Add a little more water if necessary, 1 tablespoon at a time, until batter spreads easily.
    2. Place approximately 3 tablespoons of batter in center of waffle iron. Cook according to manufacturers directions until crisp and dark golden brown. Repeat with remaining batter.

    Soy is a legume. Only allowed in OWL Rung 6.

      Try using almond flour instead of the soy flour for the moment.

      BTW when I reached the 6th OWL rung I bought a large bag of soy flour but discovered I dislike the distinctive taste of it in baking and threw it out! I use nutflours for recipes that suggest using soy flour.

        Pre-Atkins, I tried soy flour also...ruined more good recipes and wasted ingredients that way. Boy was that stuff nasty and it leaves this funky taste that overpowers all other ingredients. Ewww.

        Then during my low fat diet phase, I tried Egg Replacer thinking it was a healthy thing to do. Can't speak to that but guess what it is...soy flour. Double Ewwww. Wasted money on that too.

        Nutflours are awesome. I hope to try coconut flour some day.

          Haha okay thanks guys. I was actually a little worried about the soy flour anyway. I went out and bought some almond flour, and I will try it with that. I'll let y'all know how it goes!
