Re: Coconut
According to fitday, 1 cup of shredded coconut meat, fresh (or 3 ounces of it) = 5 net grams approx.
This equates to a 1/2 inch thick piece about 3.6" x 2" if I have done the maths correctly using their example of the carbs in a 2" x 2" x 1/2" piece, so is not a lot if you are just munching it as a snack, so you might be better served by making a recipe using it and eating 1 cupsworth of it instead.
However Dr Atkins did say we should count one ounce only of most nuts as being our OWL addition amount, and I do not know if he intended the same rule for coconuts. If so then you should only eat about 1/3rd cupsworth of coconut in a recipe or a 1/2" thick piece measuring 1.2" x 2".
BTW if you are using dessicated shredded coconut that has more carbs in it than fresh, (2.5 ounces has 5 net carbs) so you would be 'allowed' about a 1/3rd less than the fresh stuff!Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!
