    I know this is such a non-issue to you seasoned vets out there, but I had my first OWL-y lunch and it was so fabulous! I made zucchini and egg fritata from the "Atkins for Life Book", and at only 4 carbs per serving, the feta it called for and the curry I substituted made it a really special meal!

    I am not a cook, so for me to make something that complex was really exciting. I'm baking some breadless stuffing right now!

    I think maybe I'll even surprise my hubby with cooking ability. It's never been my superpower. I've always been "order out girl!" with the cape and everything.

    Lemme tell ya....

    OWL will open up a new door to your diet.

    When I feel like it I have pot roast and gravy---a yummy vegetable based gravy I make by cooking some onion, celery and mushrooms with the roast, removing the vegetables and pureeing it with the pot roast cooing juices---it looks like gravy, it tastes better than gravy and it's completely legal without those slimy gum-based thickeners.

    Red sauce? No problem, buy a jar of roasted red peppers, toss it in the blender, puree and you have a sweet pepper sauce-base you can spice up for fish , chicken, turkey, etc.

    White sauce? No problem again, nuke a package of frozen cauliflower until soft, puree in blender, add a little cream to thin it out, add herbs and spices, maybe cheese and bingo you have a white sauce for casseroles

      Megs, those sound incredible!!! Now I can't wait to cook pot roast tomorrow! I never ever thought about uses veggies as the starch/body of the sauces!

        oh yea and onion gravy is great just stick the onions in the pot with the meat and when it is done cooking puree the drippings with the onions ( I add garlic cloves whole too to the pot) and poof gravy.

        I didn't think about cheating and using a jar of peppers LOL I've been roasting and peeling them duh.
