  • What do I do if I simply can't stand vegetables?

    I am having a horrible time getting enough vegetables every day. I was barely able to do it while in Induction, and now I find I'm wanting to eat less and less of the vegetables while adding in more of the yummier foods from rungs 2 & 3. Any ideas? By the way, do dill pickles count as vegetables? I LOVE dill pickles!!! Thank you!

    Try slicing and sauteeing things like onions and bell peppers in butter. They taste really yummy but 5 net carbs of them turns into quite a small portion which can be used as a sauce by adding some cream to it.

    Yes - as long as there is no sugar added to them dill pickles = cucumbers, so are 'legal'

        Try hiding them in recipes...or find new ways to prepare them by checking out the internet. Did you ever roast baby bok choy, onions, asparagus, mushrooms, etc, with drizzled olive oil?

          Another way to disguise them is to use the trusty stick blender to turn cooked veggies into a puree then add a stock water and/or cream to make soup. You can also puree cooked meat to get both meat & veg into it!

          Or just puree veg which has been sauteed in butter till soft and call it a sauce!

            i puree into soups, hide them in quiche, steam and then put butter on them.. make big chef salads etc etc

            i'm also a veggie hater but am finding with the above methods that i'm getting in my allotted veggies every day.

              While this may not be true in your case, I find that most times, people who say they don't like vegetables are limiting their experience to eating raw veggies in a salad or as a snack with ranch dressing.

              Steamed broccoli with cheese sauce lathered (heavily) on them,
              Mushrooms sauteed in a gob of butter (perhaps with some garlic),
              Red and yellow peppers sauteed with beef in Worcestershire or soy sauce,
              Celery finely diced and mixed into tuna salad (with pickles),
              bacon-wrapped water chestnuts,
              broiled jalapenos stuffed with cream cheese,
              Spaghetti squash covered in creamy, shrimp alfredo sauce...

              The list goes on and on. So many ways to eat veggies with various forms of fat and protein that would make low fat dieters drool with envy! Follow some of the links in the above posts -- Linda's site has me looking forward to veggies in a whole new light.

                If it wasn't for the recipes and the things I can do to cover them up I would be lost. There are only a small amount of veggies I like just plain. Well actually none plain I have to atleast butter LOL. I envy those people who love them. It would make things much easier if I could love them. sigh

                  I find that alot of people eat canned veggies instead of fresh and frozen. Just switching from canned to fresh can make a huge difference. My father and father in law swore they hated veggies. I started making them try fresh veggies roasted and also steamed in butter. Both will now eat brussel sprouts, Asparagus and fresh green beans. They always thought that all veggies were soft and mushy like they come out of the can and were very suprised at how good fresh veggies tasted.

                    i cannot make myself eat broccoli fresh (for example) but LOVE frozen to steamed broccoli.
                    also, butter makes everything taste better. lol

                      I love broccoli salad with bacon and vinegar. I add a couple packets of splenda to the mayo sauce to cut the vinegar and it's yummy.

                      Genaw.com/lowcarb has a yummy squash cassrole that my husband even likes. Try some of her recipes, they are all really very good.

                        I also have a hard time with the veggies. I've tried tons of ways to cook them, raw, veggies I never heard of etc. They just dont' taste the same to me as they do to others I guess.

                        I found making my own Pico (tomato, jalepeno, onion, cilantro, little lime juice and salt) helps to get veggies in along with a salad, I can put it on my meat with a little sour cream. YUM

                          I have a hard time with certain ones more than others, and I am definately picky about how I receive them (canned, frozen, fresh)

                          For me, I hate brocolli and cauliflower. However, I LOVE the mock potato casserole from Linda's site, made with cauliflower. I also have a yummy chicken and brocolli casserole that I enjoy. I am not fond of zucchini, but love it as a pizza crust.

                          For the veggies I do like, I am particular on how they are bought. For peas, it has to be frozen. For corn, I like fresh or canned (but only a certain brand). And for green beans, it has to be canned (a certain brand) but also has to be the french cut style. I SWEAR they have a different taste than the whole ones of the same brand Very rarely will I cook fresh green beans with some pinenuts. It's good, but not my fave.

                          Oh, and another, not technically a veggie - tomatoes! I HATE raw tomatoes, but the only soup I like is tomato. Go figure. And I love ketchup, spaghetti sauce, salsa...

                          I planted a garden this weekend. I have 3 tomato plants, 2 brocolli, 3 different varieties of peppers, blueberries, strawberries, thyme, oregano, and parsley. I'm hoping fresh ingredients help me eat more veggies.

                            Nobody here is mentioning plain lettuce. You can eat that wrapped around chicken/tuna salad. Or just eat it as it is, a salad. Or you could get the shredded lettuce and top the tuna or chicken on it for a complete meal with veggies.

                            I am making a taco salad tonight. Shredded lettuce with ground beef, taco seasoning. Topped with sour cream, chopped tomatoes, jalapenos and raw onion and a few black beans. It's going to be delicious.

                              I don't like cooked vegetables, at all. I love fresh tomatoes, but can't stand to have chunks of cooked ones in my sauce. I love fresh broccoli but the smell of it cooked makes me feel ill. I love raw peapods but I shudder thinking of mushy, canned peas. I could eat an entire pound of celery in 2 days but I'll go out of my way to pick a mushy cooked piece from a soup.

                              I also don't like Ranch dressing, mayo, or salad dressing, so I've always eaten vegetables raw and plain.

                              I didn't much like fresh leaf spinach but with the cheese allowance on induction I tried eating just a bit with a little bit of extra sharp cheddar at every meal. Soon enough, I became accustomed enough to the taste that now I can throw it into a salad. I know this isn't a miracle cure to liking vegetables, but I am interested in having a healthy diet and it's worked for me so far.
