    am taking boys on a picnic later with a group of mums and toddlers. the blankets will covered with cakes and biscuits!!! was thinking of making myself these flaxseed muffins

    1cp ground flaxseed
    .5 cup sweetener
    2 eggs
    .25 sunflower oil
    dash of cinnamon and cream o tartar.
    I tried these before and they were very nice but had no sweetness to them. It would be quite nice to have a healthy but sweet treat. any suggestions what could be added?
    This recipe makes 12 mini mini muffins and I will limit myself. But it would be nice to get themto taste a bit sweeter so that I can show my friends that I am not on some crazy carnivorous diet!

    add more then a dash of cinnamon to flavor them.

    you could add 1 cup of pumpkin and 1-2 tablespoons of pie spice to make them taste like pumpkin pie.

    what are you adding as that 1/2 cup of sweetner? if you used more then one type and mixed it say 1/4th of each you could get the blended sweetner enhaced sweetness. like stevia and splenda or splenda and a sugar alcohol.

    if you are using liquid sweetner like the davinci flavors they are not as sweet as the powdered sweetners so you would need to add another sweetner


    leave out the cream of tatar should improve the taste. if you want the muffins to rise add 1/2t baking powder.

      Yes, followed your ideas and have some very tasty little muffins. I added some more cinnamon and used b powder. Worked a treat. Also baked a choc chip sponge cake for the others and now wont be tempted AT ALL!!!

        Hi Liz. Linda's low carb has some great picnic treats. I just made the tuna muffins (instead I made them in a big tin pan) and they are awesome. They'd be a nice addition to your other muffins for a savory snack.

        2big has a great idea w/ the pumpkin. It makes everything so nice and yummy!

        I see you are in Turkey??? What part? I lived in Istanbul for about 5 months and very much enjoyed it. You are so lucky to have such a nice selection of olives and cheeses at your disposal! Merhaba!

          Yes, it is lovely living in Turkey and the fresh produce and olives and cheese are so great! I live on teh Aegean, an area called Didim. On the sea and our nearest city would be Izmir.
          Great idea for adding things like Tuna! Have always thought of them as sweet things, not can experiment with savoury.

            they make great garlic bread or dill or rosemary. and if you like mexican you can add hot peppers to them with some onions and have veggies in there too.
