  • Icecream substitute!

Nothing fancy, just a simple Idea...

Ok so recently I bought some canned coconut milk, poored it in plastic container aded 2 teaspoons of splenda and put it in the freezer for about 5 hours. the midle part was very similar to icecream texture, the edges did freez solid, so maybe freez for 3 hours.
You could also add vanila extract, or experiment with other flavours.

My C milk is 2.6 carbs per 100g, nice desert for owl!

I was also wondering, should we class it as dairy product? is induction friendly?
Is there limitation, or just the carb limit?

Coconut is not dairy, but probably qualifies as nuts/seeds.

Farley is right ... bottom line, coconut milk isn't allowed on Induction.

for induction legal ice cream make ziplock baggie icecream
it is easy all you need is a small ziplock baggie and one bigger in size, some ice and salt.
you will be using your induction cream allowance for this so figure out how much you want to spend and put it in the smaller bag along with some sweetner of choice and either extract or a flavored Davinci syrup in which case you will not be using the sweetner cause it will be the sweetner.
seal your smaller baggie and check for leaks. put it in the biogger one and add the ice and salt ( you can use ordinary table salt for this if you don't have rock salt) about a tablespoon worth. seal the outer bag and shake like a fool until the inner bag is frozen to the consitancy you want.

warning do not make more then you will be eating because it will freeze rock hard in the freezer.

you get some exercise and portion control espically if you make it in the snack size ziplock baggies.
