I tried one of the fried chicken and fish recipes using pork rinds. WOW! It was really, really, good. I used the spicy Pork rinds and pan fried them in Vegetable oil. I may do some research into using actual lard. The only problem I had was getting the crust to stick to all the pieces all the way.
I dipped them in egg, then in the crushed pork rinds, then put them in the grease. Next time I think I will try to grind the rinds in a mini food processer to get the rinds into a finer dust like flour is.
I made 4 chicken strips(equal to one large breast) and one small piece of Talapia. I made some Tartar sauce by mixing 1 TBS of Mayo with 1 Tsp of diced dill pickles. Then I had a pickle wedge on the side. I made a big meal for me so I could take some to work tomorrow, but I "accidentally" ate it all. I still had half of the sauce left and just threw it away. Wow. This is going to become a regular meal for me.
