  • science behind the stall?

can someone explain the science behind a stall caused by food sensitivities? for example, why does 4 oz of cheese stall one person but not another person with identical external factors (same weight, ate the exact same food, etc.)

One person might be sensitive to it and the other person not.

It's not really about external factors.

Have you read the chapter about stalls in your book?

well, yeah, that's what im asking. the book says it's not about the external factors, so i'd like to know if someone knows the science behind the internal factors that makes one person stall and not another with the same food.

I think it is just the fact that we are all different and so our bodies react differently to different foods.

One good thing about the Atkins way of eating is that we start induction by a eating fairly'clean' menu then can experiment as we work our way up the OWL carbohydrate ladder to discover just which particular foods affect us individually so we can craft our own personal Atkins way of eating.
Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!

Some of it could be food allergies that we do or do not know about, or sensitivities. Many people are also lactose intolerant and do or do not know it. There's also often additives or chemicals in foods that we are not aware of that our bodies do not respond well to. And some of this could be genetic as well as many in my family seem to have similar sensitivities and intolerances.

I would imagine it has much to do with how our individual bodies have different resistance to insulin (if any) or food allergies we aren't aware of, or different ways of processing the same food. My digestive processes seem completely different from my husband's - I have an "iron stomach" and yet he can't eat hardly anything without repercussions! I have also worked to maintain my intestinal bacteria and eat a lot of fiber - he's existed off of sugar and junk food much of his life. I take vitamins and he has hardly ever taken any I think. There's a lot of complex systems in our bodies that contribute to how we process certain foods differently. It's all so fascinating sometimes! Oh and don't get me started on digestive enzymes, many people have different levels of those too which can aid or hinder digestion of certain things...it's cool stuff. I think its good that we're not all the same like in a petri dish or something. Makes things interesting...though tougher to know what to eat w/o problems!
