    My 14-day induction is nearing an end, and I had a question about vegetables. I've been eating 2 cups from the salad list and 1 cup from the other veggie list. I'm not a big fan of the salad veggies, but really like several of the other allowed vegetables. would there be an issue with skipping the 2 cups of salad veggies as long as I'm getting plenty of carbs from the approved list?

    Also, I'm a big peanut fan. Can I reintroduce them with nuts and seeds, or do I need to wait until legumes?

    What about peppers, mushrooms, fennel, etc.? They don't need to be eaten in a salad. They can be cooked, too. For example, you can add peppers to chili.

    Peanuts are an OWL Rung 3 food, according to Dr. Atkins, so they can be added back when you reach the nuts and seeds rung. Just be careful with them... many people discover they have an intolerance to peanuts.

      I like those well enough, just not every day. I'm especially fond of zucchini, asparagus, and cauliflower. I would prefer eating more of those vegetables than lettuces, peppers, and mushrooms.

      I know the 3 cups of veggies is the minimum, does that also mean that at least 2 cups of salad vegetables is something that's supposed to be eaten through all phases?

      I just picked up a jicama and some mushrooms I've never tried before to try to freshen the menu up so hopefully that helps.

        Yes, the induction amount of veg is a constant menu item throughout our Atkins journey.
