    Am a little confused about celeriac. In DANDR it's listed as an acceptable induction vegetable though I know it's rather high in carbs. In the OWL stick "The power of 5" it's listed under starchy veggies.

    Am only on rung one of OWL, but would like to add it to my veggies. Can I, or should I wait until the starchy veg rung? ensive

    Which version of DANDR do you have?

    I noticed that celeriac was included in "Atkins Made Easy: the first 2 weeks" and was surprised to see some veg added to the Acceptable Foods list in this newer book.

      There are a few higher carb vegetables on the Induction foods list: celeriac, tomatoes, pumpkin, artichokes, bamboo shoots are examples of them. During Induction they are limited to 1 cup. When you do choose to eat them during Induction, you have to plan how to use up your remaining carbs so you don't exceed 20 net carbs.

      For OWL, you are allowed to add on 5 net carbs of these foods. You use your Induction menu as your basic menu, the OWL foods are additions. For example, you eat a minimum of 3 cups of veggies daily in OWL--just like in Induction, if you are on the starchy rung, you can add 5 net carbs of those veggies. Let's say that you choose to eat a cup of mashed celeriac (your Induction base), during the starchy rung, you can eat that 1 cup plus an additional 5 net carbs. Your CCLL helps you plan how to distribute your carbs daily.

      I can eat up to 40 net carbs daily. If I want, I can eat a 1/2 cup of celeriac (about 5 net carbs) in addition to my Induction amounts of 1 cup of tomato slices, and 2 cups of mushrooms, and stay well within my daily carb count.

      I hope that clears some things up for you.

        I have seem widely varying estamates of the carb content of celeriac.

        What figures do folk use?

        I love it roasted.

          Yeah, I've seen different estimates for celeriac too. I tend to go for the highest carb counts because at least then, I'd know I'm not underestimating the carbs.

          Celeriac can also be sliced thinly and fried like potato crisps. :yummy

            Tickletussler... my DANDR is the 2002 version. Haven't read any of the other Atkins books yet.
