  • Different Breakfast ideas?

I have found that it's easier for me to stick to this WOE by bringing my breakfast and lunch with me to work but am getting tired of having just sausages for breakfast during the working week.

I'm not that well-paid so would appreciate any ideas people have for cheap and cheerful breakfasts that can be made in advance and brought in to the office in a tupperware container (we do have access to microwaves so that can help) and where I can make enough for the working week all in one go preferably.

    Deborah,

I tend to go through phases of having different things, but for breakfast for the last 2 days, I have had an omlette.

It never ceases to amaze me of how easy and how effective this ***diet*** is!!

I have since re-gained a bit of weight, but that is soon to be coming off again!

If you are on the grains rung, you can scramble some eggs (do this ahead of time, in a big batch for several days), roll them in a low-carb tortilla with some cheese and a dollop of salsa, and microwave it when you arrive at work.

If you aren't to grains yet, scramble the eggs with veggies and cheese, and heat up at work.

You can also hard-boil eggs and take them. (I just got one of those microwave egg boiler things for about $6 at WalMart and am very happy with it -- it hard-boils 4 eggs in 10 minutes in the microwave.)

If you're on the dairy rung, you could have low-carb yogurt or cottage cheese with some fresh berries on top. (I would probably throw in a hard-boiled egg on the side with these options, so I got the amount of protein I'm used to having at breakfast.)

I make flax meal muffins ahead and add some pumpkin to the recipe. I take 1 or 2 muffins to work along with some hard boiled eggs. You can find the recipe for cinnamon flax meal muffins at Linda's Low Carb Meals. The muffins are great! I don't use any splenda or syrup in mine and I replace the cinnamon with different flavors, such as adding pumpkin and pumpkin pie spice.

I like flax cookies with decaf coffee yummm!
Unfortunately flax gives me cravings, so I can't have those often :sadblinky

I also love cottage cheese with berries... but that's not your rung I see...

Today I had lettuce, tuna and mayo.

Oh, and I absolutely adore dinner leftovers for breakfast :nod

I usually have omelets for breakfast. I can't always eat the whole thing so I bring it to work to snack on.

Deviled eggs would be good and hard boiled eggs. Flax bread and/or muffins are excellent and filling. Celery and cream cheese. Make a dinner the night before and eat it for breakfast.

The possibilities are endless. Be creative! :icondance

I like to make the egg muffins or individual quiches. Basically, scramble some eggs, add some cream. In a muffin tin, put your choice of meat and veggies in the tin. Pour the egg/cream mixture over the meat and veggies and bake. I like to melt a little cheese on the top of each when they are almost done baking. If you look in the recipe forum, there are a lot of recipes for different varieties of these. I make a batch and throw them in the fridge. Then just microwave one or two up each morning. I haven't tried it yet, but I bet they would freeze well too.

You can look at the "mock danish recipe". It cooks in the microwave in only 2 minutes.. and I think it is very yummy! I eat it atleast 4 days a week.

After I fry up some bacon, I pour off the grease and then add a couple of eggs and some cheese to the pan and cook them together. Then I add the crumbled bacon to the mixture. YUM! If I'm running late, I just put it in a Tupperware container and take it to work with me.

The mock cream cheese danish is also good. I think I'll make that tonight for dinner!
