  • Too Many Veggies!?

    Hi! I am on my 2nd week of induction and I am feeling great!! Well, besides the fact that I am working crazy hours at work and not getting much sleep , but I really think that without this low carb lifestyle I wouldn't have the energy to work 14 hour days. This is my 2nd time around. I "did" Atkins 2 years ago with great results, but i was a student and continuing with the lifestyle during the school year proved much more difficult than during the summer. (No refrigration in your backpack )

    Anyway, my question is about veggies. I love veggies. I love snacking on cucumbers, eating salads, etc. However, I am eating too many. Does anyone have any suggestions for other snacks or additions to a protein based meal? I normally will eat meat and veggies for both lunch and dinner, but then I don't know what to snack on. Help?

    Will you please list a day or two's worth of menus for us to take a gander at? It'd be helpful all the way around.

    Then we'll be better able to blast ya with all sorts of suggestions - be they snacks or otherwise!

      Thanks for the warm welcome Brook!! I remember you from when I used the board a couple of years ago...I can't believe the changes since then!! Congratulations! You look amazing!!

      Okay, so here was my menu for today. I have a problem with breakfast because I don't really eat eggs, so I eat whatever I feel like, which is usually some sort of breakfast meat and some cheese, but i ran out of sausage...

      Breakfast:
      1 cucumber
      1 string cheese

      Lunch:
      2 hot dogs
      monterey pepper jack cheese
      pepperoni
      3-4 celery sticks

      Dinner:
      1 can Tuna mixed with dill pickles
      Salad with a few pieces of pepper, cucumber, some bacon bits and a little bit of cheese

      Normally I eat snacks but work has been crazy. And normally the snacks are veggies, so as you can see, I am not sure how to reduce the veggies and what to replace them with...
