  • PLease review Sausage ingredients

    Hiya, was trying to find out on the international site if my favourite South African sausage is ok for induction. Managed to find out the ingredients and here they are:

    Ingredients

    2 kg of chuck beef (fat and gristle removed)
    750 de-boned thick rib of pork
    200 g of pork fat (spek)
    1 tablespoon ground coriander
    2 tablespoons salt
    a good pinch of nutmeg
    ½ cup vinegar
    About 90g of pork casings (ask your butcher for some or ask him where you can buy it)

    Are these ok to eat? ANd what would you estimate the carb count to be?

    The meats are carb-free.

    You can enter your ingredients into fitday - www.fitday.com - and come up with a fairly reasonable carb estimate. Signup is free.

    The carbs may depend on the type of vinegar used, but for an approx. value:

    1/2 cup of vinegar = 7 g carbs
    1 tb of ground coriander seeds is listed as 2.75 g of carbs, of which 2.1 are fiber = net .65 carbs
    1/2 teaspoon nutmeg is .5 g carbs with 50% fiber or .25 g carbs

    So your sausage might have around 8-9 g carbs for the whole recipe.

      Wow....those sneaky carbs. You really have to be careful. My daughter thinks I am paranoid. I told her you have to be cautious with what you eat.

        Well, sneaky carbs.. the recipe posted makes 3 kg or a little more than 6 lbs of sausage, I think 8 carbs for the whole recipe isn't too bad.

          ... oh, and I would add paprika, hot chile powder, garlic & oregano for fresh Mexican chorizo
