Keeping my fingers crossed for you!!
Your menu looks fine - congrats on spreading your veggies across th day.
Maybe a tad less dressing if you wanted to get your fat percentage closer to the 65% ideal?Wondering how to get 'most' of your net carbs from your induction veggies?

Ta-da! As of today's weigh-in I'm 259!
That's 4 pounds since last Wednesday, 16 total since I (re)started!
Female / Currently on Extended Induction (again), begun 6/2/08.
I did Extended Induction from 1/3 to 5/9 (2006) and lost 55 pounds, so I know I can do it again!

Today's Menu 2/4
I've been very happy with my menus, very pleased with the variety and the healthfulness that I feel I'm able to achieve. I am highly enjoying learning new foods and eating such a veggie-rich diet, and I've found it's SO easy to break old, bad habits when there is such a reward for establishing new ones. Not just weight loss, but having such DELICIOUS meals, and feeling better and more energetic, to boot! All in all I've been very very happy with my menus, much more so after coming here and getting such great feedback and tips from you guys.
If I were to improve anything, it would probably be reducing the amount of bacon I consume, getting on a more consistent daily schedule, & drinking more water throughout the day. I'm sure there are other areas that could be improved, but I'm really tired at the moment so my brain isn't working at full speed.
I didn't post a menu yesterday because I wasn't feeling well, and much of my food ejected and evacuated itself, so I have really no idea what I wound up processing.
OH, by the way, my one month mark was yesterday! I did my first set of measurements to compare with Day 1, and the results are great!
It's really encouraging for me to see the results so tangibly. So far I don't feel like I look very much different at all, if any. But my clothes do fit looser and the scales and measurements are all giving good news.
I've shrunk all over! I've lost:
1" in my NECK, weird
2.5" around the fattest part of my upper arms
1/4" around my forearms
4" around my chest
1.5" around my waist
1" around my hips
2" around my thighs
1.5" around my calves
Unbelievable!

WOW! Awesome results on the measuring!
Isn't it absolutely weird where our bodies decide to release the weight? I mean, I had a ring fall off (into the toilet, of course..sheesh) and my wrists have gotten ridiculously thin...what's up with that? lol
I wish I had been as thorough in measuring as you have..good job!
Did you take a start picture? If so, every month put those same clothes back on and take another one so you can compare. If you look at mine you'll see that at about month 3 my shirt is getting looser. It's pretty exciting stuff!
You're doing so well, and you've made great progress...and you are able to see where you need to make improvements..that's awesome.
I'm so proud of you!

Thanks SO much for the encouragement! I didn't do a picture on day 1, can you believre it? Darn! I'm going to see if I have any pictures from Christmas that can serve as my "before" picture, since it ws only a week or so before I started. I've definitely GOT to do the photo record of this journey, yours just WOWs me beyond belief.

C'mon over!
I posted the recipe for those mushrooms in the "Side Dishes" forum, and yes, they REALLY are great! Here's the link:

I made them pretty much by the recipe the first time, and they really are terrific. But this most recent time I made them, I added one small can of lump crab meat, and added an ounce of chopped onion when I cooked the mushrooms stems and garlic. Oh, and I also added a pinch of parmesan cheese to the tops to make them prettier and have a little crunch on top. I also used "Baby Bella" (Crimini) mushrooms instead of the standard white. I love both versions! I only used HALF of the stuffing for an 8 oz. package of medium mushrooms, so I get to make them again this week.

I'd LOVE to, but I can't imagine how gross they'd be after being in the mail for so many days. Why do you guys have to live so far away?
Sorry I haven't posted in a few days, but here's the latest: As of yesterday's weigh-in I've lost my first big milestone -- 20 pounds!!! WOOHOOOO!
Now if I could just LOOK like it! 
I feel like I'm doing really well. I eat the right things, but there are days when I KNOW I'm eating more of it than I should (or than I really NEED), so that's one thing that I plan to work on eventually. But right now I can't get onto myself TOO much for it, since I don't want to overload myself with changes all at once. It's a big enough change for me to be eating the right things at all, without worrying about having a few bites too much of it here and there. One thing I've improved on a LOT is water intake, I'm now taking in a gallon a day, which I think has really helped for appetite control, weight loss and just feeling good. I've also stopped eating lettuce for salads, since it's pretty much devoid of nutrition, and I'm having baby spinach, mache and/or a baby greens mix. I'm thinking of adding a Calcium supplement, and from my software I can see I'm not getting enough potassium, folate or magnesium, so will be looking at ways to get those up. (Suggestions?)
Tuesday I felt really hungry all day, and wanted more food, even right after I ate. I'm not sure why that would happen, it's certainly rare for me on Atkins. It usually only happens when I have something like sugar alcohol sweeteners and/or low carb chocolates, or something not allowed, but I haven't done anything like that. If you have any ideas what might cause that out of the blue, I'd love to figure it out. And it wasn't any kind of craving, like I didn't want anything specific, didn't want sweets, just wanted to EAT. My TOM had just ended, could that be a factor somehow?
Doesn't it feel great to button pants you couldn't before? HA! My favorite jeans that were tight at Christmas are extremely loose now, makes me ecstatic!

Oh, another thing I wanted to tell and ask about, I bought a fiber supplement because I am not getting anywhere near enough fiber naturally. I haven't had a MAJOR problem yet, but I don't want to wait for it either! I bought "Fiber Choice" Brand sugar-free orange chewable tablets, here's a link to all the information about it: LINK Do you think these are OK? I have only taken them one day (yesterday), and have had no problems, no cravings or anything of that nature.
The nutritional information label says
serving size 2 tablets
calories 16
total carb 4g
dietary fiber 4g
soluble fiber 4g
Ingredients: inulin (a natural vegetable fiber), sorbitol, cornstarch, cellulose, dextrose*, citric acid, magnesium, stearate, natural/artificial flavors and colors. *Adds a trivial amount of sugar
I know sorbitol is a sugar alcohol, but it's one of the lower ones on the glycemic index (only at 9)... do you think this will have any negative impact? It was the best one I could find for low carbing (at my local drugstore, I didn't search the net first, which is quite unlike me.) Can't wait to hear what you think.
