  • Vegetable soup

    I actually got this from weight watchers. It is there 0 point veggie soup and I am wondering if I take out the carrots if it would be ok during induction? I miss veggie soup!

    Makes 2 servings
    about 1 cup per serving
    POINTS: 0
    List of Ingredients
    1/4 cup diced onion
    2 garlic cloves, minced
    2 packets of instant chicken broth
    2 cups water
    1 ½ cups thinly sliced zucchini
    ½ cup carrots- thinly sliced into coins
    ½ cup chopped, seeded tomato
    1 chopped fresh parsley
    4 Fresh basil leaves- sliced into thin ribbons
    1/8 teaspoon black pepper
    Recipe
    1. In large saucepan, sprayed with cooking spray, sauté onion
    and garlic over low heat until softened, about 5 minutes.

    2. Add broth packets and remaining ingredients, stir to combine. Cover and cook on low heat for about 10 minutes.

    3. Add 2 cups water bring to a boil. Lower heat and simmer, covered, about 15 minutes or until vegetables are tender.

    4. Using slotted spoon, remove about ½ cup vegetables from saucepan and set aside.

    5. Put the rest of the soup in a blender, puree until smooth. Return the pureed soup to the saucepan, add the reserved vegetables, heat and serve.
    I will stay on my diet. I will get healthy and lose weight. There is nothing I could eat or drink that tastes as good as how I feel at this moment on this WOE ~ nothing!

    I bet if you leave out the carrots it will be delicious and lowcarb too!

    I am not sure what the 'count' would be using the instant chicken broth - you will need to check the packets for any 'illegal' ingredients like sugar or starches. If you happen to have any chicken stock that would work just as well and possibly have less carbs. I make my own stock by boiling the leftover bones of cooked chicken in seasoned water then discarding the bones.

    Try entering the ingredients into www.fitday on an 'empty' day to find the nutrition numbers for the whole recipe so you can work out the counts for one serving as well as set it up as a custom food for future use too.

      I think I am going to try it. I love soup in the winter and this is good. I had a different one that had cabbage in it too, along with the above. Cabbage is good for induction so I think I will add that too.

        Soup is a great induction option!
        I often make it from whatever leftover cooked meat and veggies are in the fridge.
