  • Induction Mushroom Soup?

    I had a question...i took this recipe off the atkins site... but i honestly don't know if its ok for induction if anyone knows what i'm talking about then please let me know...it was the first time i made it and it came out GREAT! this is my 5th day on Atkins and I already lost 8lbs on only the 3rd day so I'm super happy and i want to keep it up

      Hi Julirama, thanks for replying...it's a whole onion, a 32oz can of cream chicken soup, a whole package of mushrooms, 16oz of water, olive oil and swiss cheese...plus, salt and pepper...thanks again!

        Well I'm a bit worried because you're using a 32oz can of pre-made, processed soup...you'd have to check the ingredients on the cream of chicken soup--a LOT of cream soups have added starches/thickeners or are high in sugars. They also contain a LOT of sodium, which causes water retention.

        How much cheese?

        How many servings does this make? Onions and mushrooms are induction legal, but you're limited to one cup of "other" veggies per day--so make sure you count the veggies in this towards your "other" veggies if it does indeed turn out to be legal.

          Yea, the can is big...it read that for every half cup of the can it contained 2g of sugar and like 4g of Carbs - the sodium usually are high in those cans but I did add water to the pot to definitely make the amount of soup for more servings..i had 3 cups total of that soup...but i had it for lunch and an afternoon snack...i hope that was ok! I know next time to use instead of the canned soup, i rather use chicken broth.             Netty, next time don't use the canned soups. They put all kinds of stuff in them that aren't atkins friendly.

            For cream of chicken, I use chicken broth (0 carbs) and real heavy whipping cream (1 per serving). For cream of mushroom, you could use mushrooms, butter, cream and chicken broth to make a soup.

              Yes, I'm going to stick to that - it does sound more complex and I know what i'm putting into it. I definitely know that Heavy cream and the chicken broth is permissible so i'm going to take your advice and next time do it that version...i just hope it comes out as good!! Thank you so much and nice to meet ya Joy! OH BY THE WAY, FOR JULIRAMA...I used like 5 slices of cheese and cut them into small pieces to spread it around the soup...we LOVE cheese, lol
