  • Need some help creating a menu

    Today is the first day on the veggie rung and need some help.
    I like most meat, no tuna or seafood. Veggies I like: broccoli, cucumbers, tomato, cauliflower, eggplant and onions.

    Can anyone help with a menu?

    Can anyone give me a menu to get 25 carbs in a day? Thanks. Feels like I ate a bucket of broccoli yesterday to get in the carbs. lol

        I was looking for jicama but no store had them. I'm going to try to find zuchini. But I just like basic veggies. Tomato, cucumber, onion, scallions, eggplant, broccoli, cauliflower and maybe 1 or 2 more.

        Even pumpkin isn't for me after I fixed it up with cream cheese, splenda and all the good stuff.

        Everytime I find a good high carb veggie, the fiber cuts it down.

          I found that adding lots of denser salad leaves helps me to get in some beggies and fibre too. I always have a cup on raw spinach in with my salad - it bulks it out and tastes lovely - not so watery as lettuce. Also I have arugala (rocket), watercress and lambs lettuce.

          The list of veg you like is fine for a while, but I think you may get bored with it. I really like courgette (zucchini) just steamed or fried in stir fry in strips with the eggplant might be good. Mushrooms are lovely cooked with some butter.

              That's why you actually eat more veggie servings on OWL than you probably would ever eat on the USDA's Food Pyramid.

              You can eat your veggies as sauces or soups. For example, chop 5 net carbs of tomato, make it into a sauce to pour over your meat dish or other veggies. Make a cheese sauce using pureed cauliflower as a base: cook the cauli, puree it in a blender. Put it over the heat and add shredded cheese---just as you would do if you were using a white sauce. Use that sauce over steamed broccoli or over chicken.

              Make chunky sauces like tomato salsa and use that as a side dish/salad for your meals or as fillings for omelettes or quiches.

              For soups: cook the veggies in broth or water until soft, then puree in a blender.

              Dips: cucumber makes a really nice dip: toss cucumber into a blender with scallions or onion, puree and add to sour cream. The cucumber dip can be used as a salad dressing or as a sauce for fish.

                I forgot, you can use your tomatoes and onions to make a tomato sauce. Then layer that tomato sauce with eggplant slices for an "eggplant lasagna" type dish.

                    Great ideas! I never thought about using them with cheese over other veggies. How much sour cream is allowed 2 ounces a day or so and is that instead of heavy cream?


                    I'm going to venture tonight to try the fried string beans that someone mentioned the other day as well as puree some. I need help thinking outside the box. Thank you very much!

                      The veggie rung opened up a lot of "doors" for things like Italian style dishes because of the extra carbs allowing for tomato sauce.

                      I take zucchini and "peel" the entire squash into ribbons with a vegetable peeler. Steam them and use them as "noodles" under tomato sauce and cheese and meat. Also, you might want to give Spaghetti squash a try. It's not my favorite, but some people adore it. It's just okay to my tastebuds. I'd just as soon have the zucchini "ribbons".

                      Try chayote squash made as fried apples with butter, splenda and cinnamon. That's very yummy.

                        I cook sliced red and yellow peppers (bell peppers?) in butter till soft and use them as a sauce with either veggies or meats. 4 ounces in weight is about 5 net carbs and cooks down into a couple of spoonfuls.
                        Wondering how to get 'most' of your net carbs from your induction veggies?
