    QUESTION:::::

    I have read the book and want to be sure here about Veggies. Right now I've chosen only the veggies listed in the "Salad Veggie" category until I get this right. I decided to pre-chop and pre-measure 3 cups of those salad veggies to be eaten through out the day and in the below picture.......this is what this amount looks like. Please tell me if this right or wrong for the amount because it seems like ALOT of veggies today.

      Good for you for MEASURING! Yes, that looks fine. If it were me, I'd substitute the lettuce for something a little more fibrous and higher carb too. Like Jicama, or more peppers I would also encourage you to only have two cups "salad" veggies and one cup of another higher carb, higher fiber vegetable. Pumpkin is an excellent choice, as are greens (though they are very low net carb, but high fiber--spinach is an excellent choice too). Please don't be afraid of vegetables. It is too unfortunate that people will eat a minimum of vegetables but eat all kinds of carbs in "special category" foods like olives, salad dressings, cream, cheese, avocado, artificial sweetners. The carbs in veggies are minimal and the nutrition they provide is SO IMPORTANT.

      You menu sounds TERRIFFIC, though!

            And remember, when you measure raw veggies and cook them as many of us do, they don't look like such a large amount!!! Enjoy!!
