    I'm on Day Three. How's this look?

    2 boiled eggs (at 6:00 because I'd been up two hours)

    B: 1 egg
    1/2 c cooked spinach
    2 oz (cooked) diced beef (pretty fatty cut, yum)
    3/4 c. sliced mushrooms
    1 oz sharp cheddar

    L: 6 oz salmon
    1 T mayo
    1/2 c. red peppers
    1/2 c. celery
    1/2 cup jicama

    - for cooking - 1 T. coconut oil.
    - it's only 11:30 and I've had 2 liters of water plus coffee (with a few drops of stevia) and some yerba mate (a "tea" from South America, very high in potassium & other good things, low in caffeine though it does have some). I will more than double that amount of water by the end of the day.

    I am a veggie-holic and I see I have used up all my veggies already - now what the heck do I do about dinner? My carbs are still pretty low. I have lots of great pork, beef & chicken ready to eat (cooked at home). But it's hard for me to conceive of a meal without veggies!

    I am new to Atkins but have been between 30-40 g net carbs for more than a month so I'm not having any real cravings, although I am a cook by trade and enjoyed inventing low-carb treats with quality unsweetened chocolate or cocoa & stevia, and am missing that, as well as nuts & yogurt but I know they're not far away.

    Hi Sue It is good to have a real live chef on board - I am looking forward to reading any good lowcarb recipes you invent and care to share

    Maybe we have another LC celebrity chef in the making to rival 'Stella-style'

    As another vege-holic I too found it hard to cut down on them for induction, so I feel for your dilemma.

    As I had lots of weight to lose I fell into the trap of thinking it meant I had to stay on induction for a long time, and really missed my veg for over a year In fact without realising it I probably moved to OWL rung one and ate more veg then I thought I was - it is easy to underestimate one cup of veg and eat maybe 2 if you are subconciously wishing the portions were larger I remember cramming cut-up veg into a measuring cup to fit in as much as I could

    If I had to do it over again (hopefully never again!!) I would only do induction for the two weeks then move swiftly on to the first OWL rung and stay there, adding several 5 net carb portions of veg till I was eating as many as I wanted!!

    However this doesnt answer your main question, does it I hope you got through last night's dinner OK but to avoid the same situation maybe for the next week or so try to have less veg earlier in the day to leave some available for dinner.

    BTW your veg choices were exemplary as to variety and would have been perfect for OWL rung one Such a joy to see someone on induction not sticking to '3 cups of lettuce' for a change

      Thanks, Elizellen, I've read many, many of your posts in the past days & you are an inspiration.

      I wound up eating some of the fantastic (fatty) beef & pork I'd cooked, topped with a 1/2 ounce of sharp cheddar - it was delish and so nice to enjoy it without fat-fear!

      I love creating recipes. I don't like "replacement" foods in general (and I almost never buy something that comes in a package, the only "processed" food I buy is canned tomatoes or broths, though I usually make my own), but if I can invent a whole foods alternative that's delicious in it's own right and lots of bang for the nutritional buck, then I prefer that. I made some amazing ice cream last week with egg yolks, heavy cream, organic Hawaiian vanilla & stevia - too die for, though actually a little too much fat, the top of my mouth was coated with butterfat, next time I'll use some 1/2 & 1/2 too.

      I don't see the point of lettuce! We buy the 2kg bags of spinach and they don't last long in our house. We're big on "superfoods" around here.

      Though I'm pretty much sticking to the cup measurements, I am weighing everything because it's just more accurate for counting carbs - a "cup" of something varies depending on how small you cut stuff, so this keeps me very honest.

      I'm only going to do two weeks of induction.

      I'm enjoying this & looking forward to changes and challenges, and getting to know everyone here.
