    Hey day 8....probably time I put my menu up for review!...

    Breakfast:
    two slices of fried ham in butter
    two eggs
    1 tbs onion
    1 tbs bell peppers
    1.5 ounces of cheddar chz
    1 cup decaf
    1 tbs heavy cream

    Lunch:
    2 cups Romaine lettuce
    1 seasoned chicken breast
    1 tbs onion
    1 tbs bell pepper
    1.5 ounces of cheese
    2 tbs. ceasar dressing
    1 tbs. hot sauce

    Snacks:
    usually:
    1-2 string cheeses
    10 pieces of salami
    a spicey sausage with a tsp of mustard

    Dinner:
    Salmon cooked in butter
    1 zucchini
    1 tsb onions
    1 tsb bell pepper
    1 cup decaf
    1 tsb heavy cream

    i know we are not supposed to have nitrates but i am eating very limited amounts in the sausage and salami

    Hey Ashley, all this looks good. But I'm curious, are you using 1 tablespoon of onion, 1 tablespoon of bell pepper?

    Personally I don't care for cold salad, so I get my 3 cups of veg by throwing in lots of veg to my meals. Like for a breakfast omelette, 1/2 an onion, 1/2 a red pepper (the green ones give me indigestion), a whole squash or zucchini (the baby ones), half a tomato...This gives me 4-5 net grams carb for both bfast and dinner, as I usually do veggie saute for both meals.

    I do my saute with liberal dousing of olive oil in the pan, the best olive oil extra virgin that I can afford. This gives everything a subtle sweet flavor, and I think it's one of the reasons I don't have a constipation problem like so many complain.

    It only took about 4 days of eating this amount of veg before I was cutting way back on the cheese. For me cheese is a caution b/c of the salt and b/c it does constipate. So now I just use it as a condiment. I think the richness of the olive oil cuts out the craving for that rich taste that cheese always imparts. Just a theory.

    Anyway from what you've posted here I think you are on the right track in your choices. I would just increase my amount of veg, go from 1 tablespoon to a whole or a half of a veg. I don't think you are getting your 3 cups of veggies a day, like the Dr. says for us to do.

    The concern, for me, with processed meats, is not just the nitrates, it's the salt. AT first salt may not pose a problem but I think it is a culprit in the many stories I've heard of people's weight loss slowing down as they progress. Just a thought.
