Yes very normal. It is probably because the body is used to carbs - very easy energy and you have not transitioned to ketosis burning quite yet. Keep eating - don't worry about calories or anything like that - just feed the body legals stuff and it will work out.

The menu is good - double check the sausages for sugar (or dextrose) in ingredients. Watch for the 3-4 oz cheese limit and don't be afraid of fat. It is going to be your friend. Dressing in your salad is a good thing - so is butter on your chicken if it does not have the skin there.
    Keep going.
    And welcome!!!!

Again you have to check for carbs, sugars, starches in it. Processed meats can be hard to deal with. But if you can find a good one go for it.
I used boiled and deviled eggs a lot on induction. Leftover meats are good. So is cooking up chicken wings (with franks sauce on) and eat those. Celery sticks with cream cheese can be good. And if you have not used your cheese limit - microwaved cheddar cheese crackers. Those are great.

Did you eat your vegetables? And did you have some fat with that chicken? Atkins is a high fat diet, not high protein, and too much protein can interfere with our weight loss. For Induction, about 65% of your calories should come from fat and 30% from protein.

Also, about the Jell-O cups, if you have a sweet tooth (which it seems you do), it's better not to feed it during Induction, whether you feed it with real sugar or with fake sugar.
