  • menu, new here on day 2 induction

Hi, I'm new here, doing Atkins for the 2nd time. 7 years ago, I lost about 60 lbs after my son was born following Atkins. Now, I can't find my book and I am doing this from memory. I'd like for you all to look over my menu from yesterday & today and let me know if there are any rules I'm breaking & if I should change something. Thanks in advance! Erica

    Day 1-
Breakfast: 2 med. eggs, sunny side up with 1 tbsp butter, salt/pepper

Lunch: salad - 1.5 cup lettuce, 1 oz beef fajita, .5 oz cheddar cheese, 1 tbsp sour cream

Dinner: 1 cup lean ground beef, .5 teaspoon (or less) minced garlic, 4 tbsp salsa (tomatoes, white onions, cilantro, jalepenos), 2 oz queso blanco - 0 carbs, 2 fiber, in case you're not familiar

snacks combined: 10 green olives, 2 oz queso blanco, 2 tbsp salsa

    Day 2-
breakfast: 1 med egg, 3 small slices bacon, 1 oz cheddar, 1 large romaine leaf

Lunch: 1.5 cups tuna salad rolled in large romaine leaf (homemade with 2 tbsp. real mayo, 4 oz celery, 2 tbsp onion, salt/pepper), 5 green olives

Dinner: 1 Chicken thigh, stir fried - 1 tbsp extra virgin olive oil, 1oz mushrooms, 1 oz green bell pepper, 1 oz red bell pepper, 2 oz broccoli

snack: turkey (1 slice) & cheddar (1 oz)

Lots of water, trying to get to 100 oz! Plus 16 oz per day of diet Green Tea, Lipton.

Buy a new book. Relying on memory is not going to work for the rest of your life!

    >>2 oz queso blanco - 0 carbs,>>

This is a cheese, right? So it has carbs. And Dr. Atkins says to count cheese as 1 net carb per ounce. The limit of cheese is 3-4 ounces per day, too ... and you're over. I'm also not understanding how the queso blanco has fiber.

    Is the salsa homemade?

salsa is homemade, and I copied the nutritional information from the cheese packaging. So. I guess it could be less than .5 of a carb, but its written 2g fiber, so go figure
I didn't remember that the book says 3-4 oz cheese, so thats good to know.

        I would look again.

I don't see how cheese has fiber.

Looking it up on Fitday, there's no fiber.

          So I thought pretty good.
Not sure about that cheese. In the book it says that fresh cheeses are not allowed. Not sure how that one classify. the rule we use for cheese is to limit it to 4 oz and to count all cheese as 1 carb per oz. all cheese will have carbs.

Did you count your carbs? Most of your carbs should come from veggies. Remember that tea has carbs - and sweetners we count as carbs too

Thanks Liv, it is a fresh cheese, darn! Its about the only kind I like... I am staying under 20 carbs, I just needed a bit of help with those extra things - like no fresh cheeses and only 3-4 oz. I'll have to modify a bit for the future. You know, the bottle of tea says 0 carbs, 0 sugar (its aspartame) - could it be wrong?
            -Erica

Atkinsgal - I did check, several times "2g dietary fiber". But I am sure you think you know more..

Re: menu, new here on day 2 induction

Usually if there is less than 0.5 carb per serving the label can claim zero but us carb counters need to count it all. Atkins also suggested not using aspartame as he found it stalled many of his patients. And for sure no more than three servings of sweetener per day. Sweet stuff is best to avoid on induction

                Yes, it's "wrong".
