  • I'm back again...

    I'm back again after falling off the wagon yet again. I know that Atkins is the only way of eating that has worked for me, but I keep screwing up. I'm back to my old weight after trying the 'everything in moderation' bs but I quickly let the bad foods sneak into my diet. I need help! One of my problems is I need EASY, and quick food. I mean I need really easy meals with almost no prep. I know I should get used to cooking from scratch alot more, and I do great for a while, but then my busy life gets me bogged down and I start with the fast food or bad snack foods. I know myself well enough to know that if it's not easy I won't stick to it. I really would like to have prepared, frozen foods that I could get at Trader Joe's or Costco. I lose weight so fast when I'm being good, but I feel like such a loser right now.

    Welcome back. What if you just spent one day a week (or less) making home cooked food you could freeze for the rest of the week? It is expensive but there are more and more already prepared foods availible to you. Put your mind to it and I am sure you will do great.

      I will hopefully get into that habit, but right now when I'm not working I'm remodeling the house, taking care of our areage, and taking care of the animals, and on and on. I did try for a while to prepare a bunch of foods on the weekend that I could freeze, but I know I won't keep it up.

          What a horrible way to go through life. I mean no disrespect, but Atkins teaches more than just eating right, it teachs patience,diligence and most of all endurance, the ability to see the light at the end of the tunnel at all times.

          You got to let your old self go and embrace change!

              What foods on the allowed list do you like?
              How about baking a batch of chicken breasts, eating one then putting the rest in the freezer. Maybe cut some into strips to throw on a salad.

              Get some bags of prepared salad makings or frozen veggies and portion them into cups-worths (is that a word?) to grab when you need a meal.

                I really hope we can help you, it would be so sad if you could never accomplish to lose the weight you want.
                Just take little steps, but try to really chose for this way of eating. :hug

                  Costco sells carnitas and barbacoa that you just throw in the microwave for like 8 minutes and it's super yummy. One box of carnitas lasts me like a week and I put it in my eggs at breakfast and on salad at lunchtime.

                  Hardboiling eggs doesn't take too long and you know you can scramble eggs in the microwave right?


                  Another thing I like to do is roast a chicken and live on those leftovers. there is a really simple recipe for roast chick on atkins website and while it takes about an hour and a half to cook there is virtually no prep work to it and then you just throw it in and baste it twice. http://atkins.com/food/recipes/all/F...d_Chicken.html



                  Steaks are relatively easy. Some salt and pepper and throw them on the grill and there are usually leftovers for that too.

                  As you can see I am big time into leftovers.

                      Thanks guys! I am already feeling better after just one day! And Spirittalker, I just went to Costco again last night specifically looking for Atkins friendly items and did pretty well. And I did find the carnitas and barbacoas. I bought the carnitas and the guy at the checkout said they were really good. I also bought bacon-wrapped pork loins and a few other things that will make meals easier for me. We had tried the chicken cordon blue from Costco recently and really liked those so we bought a few more boxes of those. Any salad recipes that will last for days in the fridge? I wouldn't mind making a big batch of salad.

                        Forgot to mention, we also just bought a deep fat fryer so if you have any 'breading' ideas or would like to tell me what you guys like to fry that would be great. We have a big pack of mozzarella sticks and I'm wondering if I can 'bread', freeze and fry those like they do in restaurants???
