Ugh, I carmelized my onions and it was gross!

  • Ugh, I carmelized my onions and it was gross!

    Two nights ago, I was making greek chicken, and I decided to fry up some onions in butter. Well, I fried them until they were brown and plopped them on top of my chicken and I about gagged, they were so sweet! I had to take them off, they were about to ruin my dinner.

    Why are onions on the other veggie list in Induction if they have the potential to be so sweet? Are the really high on the G.I.?

    No Weigh Until Christmas Day!!!

    There is such a thing as sweet onions ya know. lol

    I love them when they are cooked that way and a little brown...love em on burgers! Johnny :guns

      I think they are. I use them in very limited quantities as they are very carby.

        Just before your onions are ready throw some sliced mushrooms in with them and try that on burgers. Mmmmmm.

            They aren't Vidalia or other sweet onions (at least they don't say they are), just plain ol' yellow onions.

              G-Mom,

              carmelizing onions changes them chemically, making them sugary. It does increase the carb count. I know eating them raw is legal, but I'm not sure why. Just a freak onion thing I guess. If you lightly fry them in butter, not so much as to carmelize them, they are OK if you don't eat too many.

                Sorry G-Mom - I love caramelised onions so you won't get any complaints out of me

                Some veggies I noticed also with leeks and red cabbage, when you cook them, they caramelise ie a lot of the veggies' moisture evaporates off and the natural sugars of the vegetable becomes more concentrated, hence the intense sweetness. Next time don't cook them till they are so brown and caramelised, so you can enjoy eating them with you chicken.

                    I learned my lesson. I know I really have immersed myself into this lifestyle when even carmelized onions are too sweet for me to eat. Eating actual sweets might cause convulsions!

                        I can not imagine anything better than well caramelized onions!!!! OMG they are wonderful!!!! But you are right they are sweet so I use them sparingly!!!! you can add mustard to them like a dijon and it tones them down and makes them more savory and less sweet...onions are good for you ....and if you do not like them that way you can put them on my plate I will eat them for you!!!!! what you made sounds yummy!!!!.....
