  • Cooking before Sugar

Has any study been made of how we fed ourselves before sugar was available?

Are there any published, workable recipes?
Atkins didn't say 'Calories don't count',
    he said, 'Don't count calories.'

    old fashion cooking

    HI,

PBS had those four shows about life in the old days. Its a reality show where they take people and put them in an 19 century house. They then have to live like they are in that time.

    There were four shows:

Frontier House, 1900 House, 1940s House, and Manor House.

I bet if you researched the pbs website or even google you'd find info on what these people ate. I remember watching the show and they said that these people rarely had sugar, it was uncommon. They also had a lot of the recipes. You might want to look into what people on the range ate too. There are a lot of societies/clubs that keep these traditions up. I guess you can tell I watch too much pbs

    Good luck,

    Vixie

I own an old book called "The Healing Power of Whole Foods" by Beth Loiselle that has some great recipes in it. It's mainly a whole foods 'how to' but I have used a lot of the recipes as well.

Most good whole foods stores (co-ops, chains like Wild Oats, etc) have sections of cookbooks. That would be my best recommendation!

      Hope that helps a little...

If foods were sweetened they were sweetened with things like honey, tree syrups (maple, birch, etc.). They also made thick pastes from stewed fruits for sweeteners. Sugar was expensive. In Colonial America (and I'm sure in the rest of the world at the time), sugar was molded into cone or loaf shapes and the cones of sugar were locked in a wooden box. Sugary recipes were usually reserved for special occasions due to its expense.

Flours were usually coarse meals, rather than the fine white powdery stuff we have today. Bread was available, but people also ate their grains in the form of gruel or porridge.

You can try looking up Roman recipes (they were into a pungent fish sauce as a seasoning for their savory foods) or medieval European recipes (they used alot of nut milks and spices). This site is a good medieval recipe site http://www.godecookery.com/
