I have been meaning to try this and finally got around to it....... I had made some of the Flax bread using this recipe - good stuff:
Anyway, I wanted to see if I could add to it and make a Blueberry Flax Muffin/Bread because blueberries are in season here. To the above recipe I added 1/2 cup or so of blueberries, 1/2 teaspoon of lemon zest and 1 1/2 tablespoons of Splenda. I put it in a microwaveable container and it made a small loaf.
Can you say YUMMY?
I cut off about a third of it and slathered on some butter and it was pretty darn close to eating a regular blueberry muffin!
