Looking for Vegetarian Atkins ideas...

  • Looking for Vegetarian Atkins ideas...

    My fiance has seen the progress I've made in just the past 2 weeks and wants to give it a try. Thing is, she's a vegetarian. I'm sure it's been done before.

    Any help would be greatly appreciated.

    Soyburgers are good. Boca burgers and Gardenburgers are good.. just check the carb count on them. Tofu is also a good option. Is she a lacto-ovo vegetarian? If so it makes things easier as she can have eggs and cheese!

        What about eggplant parmeason (sp?) or lansanga? You'd have to find a suger free/low carb tomato sauce though.

            It also depends what type of vegetarian she is. If she is a pesca-vegetarian or a lacto-ovo vegetarian, Induction won't be too hard for her to do. However, if she is a vegan, she might have better luck starting off in OWL.

                Induction won't be that difficult because she is willing to eat eggs and cheese. However, I suggest that she move onto OWL after the 14 day Induction, in order for her to get more food variety.

                Tofu is allowed during Induction, but it's is considered a "Cheese" and is subject to the Induction cheese amounts of 3-4 ounces daily. Moreover there is controversy surrounding the soy products and their effects on general health--particularly thyroid function and the brain. So, it's one of those foods I label "okay to eat, but be careful with it".

                    Why would salads be out of the question? On Induction, you're supposed to eat 3 daily cups of vegetables on the Induction Acceptable Foods list. If she eat that veggie amount plus eggs, cheese, tofu for protein sources, she should be able to do the Induction phase without any major food boredom issues. Then she should move onto the On-Going Weight loss phase where she'll be able to eat other vegetable-based protein sources.
