I went to the grocery store about three times in the past week and a half to pick up things I keep forgetting to get. One of the things I thought I didnt get each time I went to the store was celery. So now I am stuck with 4 bags of celery and dont know what to do with all of it. I usually buy it to use when i make tuna fish, or some kind of stir fry. Anyone know how else I might use it for dinner? I know I can put all those things on it to eat...like cheese, peanut butter, cream cheese...is there something more substantial I can do with it? Looking forward to some good responses!!! Help me before my celery goes bad!!!

You can boil it like other veggies and have it on its own with perhaps cheese melted over it.
I often also use it as a casserole or stew vegetable - just chop it and toss it in.Wondering how to get 'most' of your net carbs from your induction veggies?

My friend, make a list...lol...make a grocery list and take it with you next time and only buy what's on the list!
Bf is notorious for not looking in the fridge before he sets out to go shopping and we've ended up with double amounts of different things over the years.
Celery is great chopped up and scramblefried with hamburger. You can add a few other veggies in, add a cup of water or chicken broth with soy sauce, reduce the liquid down and have a sort of chinese skillet dinner.
Depending on what stage of Atkins you are on you could do a salad with chunks of celery, jicama, walnuts, some grapes, mayo, splenda...sort of a Waldorf style salad (I think that's the right one ??)
If your celery has the green leafy bits on it still, cut them all off, chop them up and freeze them in an airtight bag or container. They are fantastic added to soups, stews, etc...they add such a great flavour.

you guys have such good ideas...thanks so much...i think it would especially be good in the ground beef and waldorf salad....thanks much guys!!! Keep the ideas coming if yall have them. I have way too much celery...well...i shouldnt say too much now that I know you can freeze it. One question though...when you freeze it, is it still crunchy when you thaw it out?

This idea popped into my head.....
AWSOME potato soup recipe (one of the few things I truely miss) has a cup of cut up celery, a cup of onion and several pounds of potatoes. Maybe try a mock version with califlower?
My other suggestion is veggie soup. zThrow several stalks (cut up) in the the 'leftover' veggies....you know, the little bit leftover after dinner that you don't want to throw out, but no one ever seems to eat? Toss those into a pot with several cups of water, bullion, maybe some cut up meat....Let it simmer for a while, and *Poof* instant soup that took an hour to make and tastes great.AD Dogs are Angels

I like celery fresh and I get some of that herb flavored cream cheese and "stuff" it with that. Celery is one of those good for you veggies.
I have never tried to freeze it, but if you don't want it fresh, freezing it would be fine. Expect, I would cut it first, maybe some large chunks for stews and soups, some smaller dice for any other recipe that you can think about.
I have done the same thing, I bet I have 20 garlic bulbs in my kitchen right now.
There is certainly a lot to be said for making a list.

Don't freeze them, they get limp. Wash them and wrap them in silver foil and then stick it in a baggy in the fridge.
I jsut add it in tuna and egg salad and stuff. I use it as a spoon, too.

Yah that was what I was thinking, celery soup.
celery, some garlic hehehe, onion, broth, cook it till tender, then process it, so the ingredients are mashed up and then add some cream and pepper and salt to taste YUM !!!41 year old female, lenght 5'5'' and a half

Cream of Celery Soup
1 small bunch celery (with leaves), finely chopped
1 tablespoon butter
1 onion, chopped
4 1/2 cups chicken or vegetable stock
1 1/2 cups heavy cream
salt, celery salt and pepper to taste
Serves 4-6
Note: Reserve a few chopped celery leaves for garnish before starting.
Heat butter in a small soup pot. Add onion and stir over medium heat until softened, about 3-4 minutes. Add celery and cook over low heat, stirring frequently, until celery is softened but not brown, about 6 minutes. Add stock, cover and simmer for 20 minutes, or until celery is tender.
Purée soup until smooth in a blender or food processor, working in small batches. Return puréed soup to pot and stir in cream. Season to taste with salt, celery salt and pepper. Stir soup over medium heat until just heated through. Serve immediately. Garnish with chopped celery leaves
