My favorite food in the whole world is eggplant parmesan. I have a lowfat version I've used for years on WW... but haven't had FRIED eggplant parmesan in FOREVER.
Tonight, I made eggplant parmesan (eggplant in egg, then parmesan and spices, then fried in canola) and had a side dish of the most amazing chicken scampi recipe. Oh my WORD!
But hey, after tonight's dinner, I am at a perfect 65/30/5 ratio!
And I am perfectly full and it was DELICIOUS!
