  • Carbs, Veggies & Cooking 'em...

    Does anyone KNOW how cooking vegetables affects the carbs in them? Do they increase (the carbs, I mean), decrease or stay the same?

    I ask because I can't seem to find a carb count for cooked radishes. I've also noticed that lots of veggies with their carb counts listed, will say "RAW." I've even seem some with two listings, one for raw, another for cooked.

    The difference in the listings for raw and cooked has to do with volume, not carb counts. For example, a cup of cooked spinach is different than a cup of raw. There's more spinach in a cup of cooked than in the leafy raw stuff.

      Yes - the 'cooked/raw' counts are as Finelly said - taking account of the fact that some veggies (spinach) reduce in size dramatically once cooked.

      When I use cooked radishes I use the carb counts for the quantity when raw. So I weigh or measure them before cooking.

      At least that way if any of the carbs do cook away I am not underestimating the carb count.
