A few times a year my family goes to all day assemblies. Some last for 3 days, but the one we are going to this weekend lasts only for one. I usually like to pack lunches and snacks for us, which means the food will be sitting in the car in an ice chest most of, if not all day. My Atkins' standby's are meat rolled with cream cheese and maybe some olives. Salads are great but high risk in this situation, so I try to avoid them if I can. Does anyone have any suggestions on what they would pack? Please gear your answers toward the induction side of the plan.

Re: Meals for travel
If you look in the 14 Day Forum, there's a sticky called Induction Recipe Basics. In that thread, you'll find a recipe for Atkins Revolution Rolls. I've used them since Induction (still do now), as sandwich bread for sandwiches. They hold up pretty well.
I also pack veggies, like green pepper strips, celery sticks, raw or lightly steamed broccoli or cauliflower. I've even packed away green salads: dress them before you eat and keep them cool.
Not surprizingly, some foods we normally think of as "cold" foods were originally room temperature foods, like quiche. Quiche holds up very well in a cooler. So does cold baked chicken legs.
You can buy bottles of water and freeze them---they'll act as ice and by the time they melt, you'll have cool water to drink.~Megs~

Re: Meals for travel
Well I just had to go on two long airplane rides last week and didn't have much time to prepare my snacks for the airplane, so I improvised a bit.. One thing I did was I cooked about 10 pieces of bacon and put them in a baggie.. I sort of felt like i was eating dog snacks, but I love bacon and sometimes you just need to CRUNCH on something when you're in a cramped little airplane seat!! On the way back I put a bunch of rolled up deli turkey slices in a bag.
Those probably aren't very helpful tips, but that's waht i did and it actually worked out well! goodluck!

Re: Meals for travel
Mary-chan,
All tips are good ones. It never hurts to be prepared as I have to fly to Florida in January for work and tips will help me out!

Re: Meals for travel
Cheese crackers keep well in an airtight contaner or bag.
Also Pau's breakfast quiches

I often add veggies like cooked broccolli or spinach when I make them to take care of my Veggie quota.
As Megs said - frozen water is good to keep stuff cool enough for a day if you dont have one of those car coolers that plug into the lighter socket.Wondering how to get 'most' of your net carbs from your induction veggies?
Take a look at the thread from the latest Veggie Challenge to see how others manage it!
Check out our Low Carb Recipes website and add to it!!
