  • Celery root anyone?

    I recently saw a post on here about this and went out and got one at the store. It is sitting in my fridge and I am now wondering what to do with it. What are some of you guys' favorite recipes using celery root. Do I peel it and then boil it? How to prepare and cook in a way that I'm really gonna enjoy it. I know myself and if I don't love it the first time I'll never get it and cook it again. Same thing happened with the spaggetti squash.

      There is all kinds of ways you can use it.
      You need to peel it first.
      You can cook it (about 5 minutes) and then puree it, as mashed potatoes, add some butter and a tiny bit of cream, some nutmeg maybe, hmmm and use as faux mash.
      You can cut it like frieds and well....fry it, yummie.
      You can cut it in very thin strips, like match-thin, then blanche it (boil salted water, add the strips for about a minute, take them out, cool down immediately (iced water)) and use it in a salad.
      Or even make a celery-salad:
      Mix the strips with some mayonaise, heat a pan without butter and heat some curry for about a minute (the yellow powder) this is done to get the taste 'out' and to make the texture less 'corny', add this to the mixture and cut a cooked chicken in little pieces and mix that in also, some pepper and salt to taste, ready to eat.
      You could cut the root inch-size, cook it (5 minutes again) put in an ovendish and top with cheese and heat it in the oven till the cheese has melted.
      I think that is about what I can come up with really quick right now.
      Oh, it is also very good in any soup.
      In the Netherlands we call the celery root 'pee-root', it works as a diuretic.

        I don't know about the root either but you look AMAZING! You rock with that weightloss girl! And I LOVE the floor tiles in the pic with the blue hair...lol.

          Use the search feature to do a serach for celery root. There are at least 2 recipes in the recipes forum of this board that use it.

              Thanks for the ideas, I'm definatly gonna use it. I thought I had heard that you could make chips with it. I'm sure you would jsut cut it into thin slices and deep fry for a few minutes and then season to taste. I bet it would be good, I think I'm gonna try it when I get home today.

                  WE call it celeriac over here, so when searching for recipes try that name too.

                  I dont even waste the peel. I scrub the celeriac thoroughly before peeling it then boil the peel and knobbly bits till soft. Then into the food processor and you have a great foundation for a soup.

                  I usually process and add whatever veggies and cooked meat is lurking in the fridge to make a really 'hearty' soup to eat with a few croutons of flax bread..

                    The recipe for the Celeriac chips is listed in 3 places on ADBB: the Snacks forum, the Cooking Lessons forum and the Food/Chat forum. I really suggest you use the search feature to find more celery root recipes.
