  • Thanksgiving Dessert

    Hey everyone...

    I'm looking forward to a nice thanksgiving meal. I promised myself I would skip the pasta and enjoy the turkey and the vegetables. However, I would also like to make a low-carb dessert for myself and anyone else in my family who is interested.

    Just wondering...what are the rest of you planning to make for low carb dessert-if any? Suggestions? Recipes?

    I'm not much of a dessert person (I'm a potato-rice-pasta carb junkie).

    But you can make a pumpkin flan. http://www.texascooking.com/recipes/pumpkinflan.htm

    You can follow that recipe, but substitute the sugar, substitute a 3:1 mix of heavy cream and water for the milk and don't bother with the caramel.

      Neither of these is induction frendly.

      1. Chocholate naughtyness.

      1.5 oz very high quality chocolate (I Use Lindt Excelence 70% 0r 85%)
      2 or 3 fl oz cream (UK double or single - US Heavy?)
      1 oz (or less) butter

      optionally a teaspoon of splenda - I need it with 85% but not with 70%

      Microwave on defrost (about 2 minutes) and stir till you have a smooth mixture. May need more time in microwave if mixture appears granular)
      Cool for a few hours in fridge.

      This makes a lovely chocolate fudge - serve with cream or whipped cream if you like.

      Carbs - about 14 in the chocolate - not much elsewhere.

      2. Creamy Yogurt and Berries.

      5 oz weight full fat Greek strained yogurt
      (I use Total from Greece and available in US)
      Mix in a teaspoon of splenda and vanilla extract.
      I use Kays - US Brand, expensive UK, but excellent.
      1 teaspoon of Kays, but less than half of cheaper vanilla essence.

      On top 2 oz strawberries, rasberries, blueberries, blackberries, blackcurrents, redcurrents --or a mixture

      Yogurt 5g carb, berries 7g carb

          My mom made this awesome low carb pumpkin pie last year. It was soooo good! I wish I knew where to find the recipe. She got it out of one of those small recipe books you get at the check-out in the gorcery store....hmmm....
