  • Post your favorite meal. Read inside for details!

    What is your favorite (Atkins friendly) meal of all time? Plan it here. Include a main dish, side dish(es), dessert, drink, etc.

    For the sake of this post, lets assume that you wouldn't be full after the main dish. I'm just curious what some of your all time favorite dishes are.

    WOW, thats a tall order my friend. I have so many favorites BUT if I had to plan a menu to show off my low carb fare to non-low carb friends I think I would start with an appetizer
    Crab Dip with veggies
    Then for the main course, I would cook something like Steak with Mushrooms
    The veggies would be a combo of many grilled because I love grilled vegetables.
    I would make Faux Mashed potatoes with Caul and sour cream etc
    Cheesecake for desert.

    Not very inspiring, but having been cooking much lately.

      Chili relleno's and steak and mushrooms. Any raw veggies dipped in ranch and plain ole fried pork chops!

        taco salads recently.... burgers or anything with Franks redhot(or any hot sauce), celery with ranch and hot sauce...ummmm.... I think my favorite is eggplant or zuchinni lasagna or parmesan!!! YUM, however I cannot control myself when I make it so I don't make it often! I have more trouble with acceptable foods controlling portions than I do with foods I can't eat!!! sheesh!

          Salad: bitter greens (arugula, endive, etc.) with Stilton cheese, toasted walnuts and sliced pears dressed with olive oil and red wine vinegar OR bitter greens with baked goat cheese (couple ounces of goat cheese coated with almonds and baked until warm)

          Main course: Roasted salmon with a lemon butter sauce

          Side: steamed asparagus and green beans

          Dessert: no room for it typically, but if there is a fresh fruit salad of berries, grape halves and tangerine segments.

          PS: Since you didn't specify a favorite meal for a particular phase of Atkins, I gave my favorite OWL meal.

            Everybody else's sounds so much better.

            I don't usually do appetizers, but here's one I made once that was awesome (to me):

            Slice cucumber or zucchini thinly lengthwise (I used square slicer hung over the side of the counter, so the slices wouldn't break). You could use a mandolin.
            Spread with cream cheese
            Top with smoked salmon
            Roll up and secure with toothpick.

            Any "insert" would do - whatever is your favourite.

            ---
            Main course -
            grilled or broiled salmon rubbed with crushed garlic and herbs/salt & pepper

            Mixed greens salad with a few slices of green/red/orange (whatever colour) pepper, and perhaps a couple grape/cherry tomatoes. Oil & vinegar dressing.

            Steamed veggies, especially green beans (my favourite)

            ----
            Dessert - I don't know, but blueberries and liquid cream (no sweetener) usually hits the spot later in the evening. You could flavour the cream with a little sf syrup if you wished.

            Most of that menu would be induction-friendly (less the berries)

            Instead of the berries, a nice piece of cheese (brie, swiss, provolone) and a herbal tea would be nice.

              I can't think of anything I love more than Longhorn Steakhouse ribeye, a salad with ranch, and broccoli with butter!! NO DESSERT NECESSARY!

                Had one of my favourites this evening (its 9.45 London Time)

                Roast Lamb
                Roast Cauliflower
                Roast Celeriac

                5 oz Greek Yogurt with one teaspoon splenda and vanilla extract.
                2 oz mixed berries on top
                Atkins didn't say 'Calories don't count',

                    Hmmm, there's lots to choose from, but one of my comfort foods has to be sloppy joes.

                    I bought a little coffee bean grinder and had to try it out with one of my favorites. The grinder plus my dehydrator and mortar and pestle make for some awesome spice mixes!

                    The spice mix had potassium salt, pepper, garlic flakes, dried onion flakes, and dried celery all to taste. I ground that to a powder and added about 1Tbsp/lb of lean ground beef. I browned the ground beef with the spices, and used about 3 lbs of beef in a really big lidded frying pan. Once the meat was browned, I added 2 tiny cans of pure tomato paste, about a tablespoon of Worchestershire sauce and 2 Tbsp of A1 steak sauce. Mixed everything together well and cooked till the beef was very browned and everything was hot through and reduced a little bit. No need to drain the fat as there wasn't enough excess, and i need the fat!

                    Once the meat mix was ready, I put 6oz on a plate and shredded an ounce of cheddar over the top and put a couple spoons of plain full fat yogurt to the side. Add to that a bowl of romaine and spinach salad with oil and vinegar dressing.

                    This was really yummy and very filling, so no dessert needed. I had to actually weigh the meat mix so I didn't overeat it! 4-6oz per serving is plenty! The 3 lbs of meat means that I'll be eating it for most of the week as lunches and dinners or breakfasts.

                      I would start with stuffed mushrooms or grilled bacon wrapped shrimp.

                      Main course would be mixed grill and grilled veggies, peppers, squashes, tomatoes, mushrooms, etc.

                      Follow with a salad and cheese plate.

                      For desert I will always love the flourless chocolate cake posted by (labarum, i think?) in the recipes section.

                      Or some whoop cream with raspberries.

                      Maybe both together.
