  • Flax: any info appreciated!

What do you guys think about flax? Is it ok for everyday? Do you think I could have a flax muffin everyday? here is what I have been making them out of

    3t flax
    1tbs olive oil
    1 egg
    garlic powder
    italian seasoning

These are sooo good, I slice them in half and eat like a sandwich, they are better than any true low carb bread I have ever tried...
I made a blt on one the other day and it was sooo good!

I love flax, and that looks wonderful! Where are you in Atkins? If induction, no flax. Flax is the nut rung in OWL.

There's a flax discussion going on in the Food and Chat section (of all places.)

You might want to look there.

According to Dr. Atkins in DANDR you can. He lists psyllium husk, wheatbran and flaxseed meal all as possible options. As quoted from chapter 11 (the Induction Phase) on page 136 of my book:

As mentioned in the rules of Induction, you should also be supplementing with one or another form of fiber, usually wheat bran or psyllium husks, to prevent constipation. For more on the benefits of fiber, see "Fiber: A Form of Carbohydrate" on pages 75-76
(which is where he also mentions flaxseed meal)

                  Re: Flax: any info appreciated!

Here is what I posted earlier in my journal. I don't like sweets so I made mine with garlic and Italian seasonings. The recipe originally called for splenda and cinnamon.
                  3tbs flax meal
                  1/2tsp baking powder
                  1 egg
I use 1tbs olive oil, the original recipe called for 2.5 tbs butter
garlic and Italian seasonings to taste

First beat up the eggs and oil, add remaining ingredients and let sit for 2 minutes. I made mine in a glass breakfast bowl, then you cook in microwave for almost 2 minutes, I think the recipe called for 1:45. The first one I made came out a little hard on the bottom, you just have to watch it. I just turn the bowl over and it falls right out! I let it cook a couple of minutes then slice down the middle for a nice sandwich bun!

I tried your recipe. I hadn't used flax yet. It is some interesting stuff. It worked really good as a bread substitute. I like it with my omlette. I will have to find some more recipes now that I know what to do with it.
