  • Food ideas needed...

    Christopher (Alpha_wolf_1966) is now at Drill Instructor school, where he'll remain until March. He was doing wonderfully on Atkins before he left, but now his cooking arrangments are much different. He's staying at the Inn on-base, and has his own room. However, he has to share a kitchenette area with others. It contains a fridge, a microwave and a coffee pot. He does have access to the dining hall, but not very much time to go there. I've been thinking up Atkins appropriate (he prefers the induction phase) food that he can whip up with his limited kitchen. Here's what I've got:

    bacon
    scrambled eggs
    mock danish
    flax crackers/cookie

    All these can be made in the microwave. He can also use deli meat and roll them up with some cheese and veggies. He can make salads as well. I've been thinking that he could try and recreate the mock-rice stirfry in the microwave as well. No hot plates are allowed. I'm THINKING that crockpots are not allowed either, but I'm going to double check on that. A crockpot would greatly increase his options.

    Does anyone else have any ideas??? Any help would be greatly appreciated!!!

    I know that you mean recipe ideas. but what about a forman grill.

      Unfortunately, he's not allowed a crock pot or a George Foreman grill....

          Cheese chips. Melt thin slices of cheese on a greased-up plate until crispy (usually a minute or so - YMMV). These are good snax. Can he keep stuff like pepperettes and stuff in the fridge or are others likely to help themselves (at my house the rest of the family gravitates towards my food instead of their own snax. I have also made fish and chicken in the microwave. Just put it in a microwave safe container, add seasonings and maybe a little something for moisture (a little broth or water), give it a quick spray of Pam and cover with waxed paper. I'm just not sure of the times. It depends on how big the fish/chicken is and how big the microwave is. If you don't overcook them they come out moist and tasty. Frozen veggies can be cooked in the micro too.

            I mix up tuna or shredded chicken from the can, with mayo, 1/2 packet of splenda, and mustard. I eat it with celery sticks or cucumber slices.

            lunch meat with cheese heated in the microwave and rolled up to eat.

            raw veggies and dip

            Get one of those whole cooked chickens from the grocery store and use for a few meals. Make sure to check for added ingredients. Some have sugar and some don't.

            That's all I can think of for now.

              I just googled microwave recipes, and this site doesn't look bad. There's even meatloaf recipes, and some caseroles that could be tweaked I'm sure. If you google microwave recipes i'm sure you'll get back alot of sites with some ideas:

                  canned things like tuna, salmon, oysters, mussels and even veggies can extend his possibilities. Cheese is always a good add-on to a variety of things. Herbs and spices can add kick to even plain old omelettes (microwaved, I guess). You can even buy containers of eggs/egg whites pre-mixed, if necessary. If you were close, I'd say prepare meals that could be frozen and re-heated in the microwave.

                    Spaghetti squash can be cooked in the microwave, low carb spaghetti sauce can be heated in one too, or just add butter and parmesean cheese.

                        I just wanted to say thanks to everyone for all the ideas. I'll be busy for the next few weeks, but will be stopping in to see how everyone is doing.
