    Are parsnips ok?
I roasted some with dinner tonight and my goodness, they were absolutely delicious!

Depends what phase of Atkins you are in.... They are definitely not on the Induction Acceptable Food list, but they can be added back to your diet during the "Starchy Vegetable" rung of OWL.

Have you printed out a copy of the 'allowed foods' for induction to have with you when you choose/eat food?

In the 14-day induction forum there is a wallet-sized one you can have in your pocket for easy reference.

This is absolutely the time to bring in the parsnips cause they need that touch of frost to sweeten them up, then fry them in butter or EVOO, but I like butter better. Make my mouth squirt. Yummmy

We like these cubed, coated in olive oil and roasted till the outside is all crisp and golden and the middle is all soft and squishy.
I like the texture of them more than the taste so portion control isn't a problem. I do them up with my turnip fries.

Funny that you posted this today. I was just staring at a parsnip in the grocery store today thinking "I wonder if this is legal . . . I wonder how you cook it?" I had to consult the grocery's illustrated book of veggies just to find the turnips! Sad . . .
