Re: embarrassed
I've never had that effect from Jicama, but perhaps the reason that you do might be found in this information from Beano's website.
Beano® Cited as Recommended Solution FOR Preventing Symptoms OF Newly Identified Condition: Complex Carbohydrate Intolerance
ANAHEIM, Calif. - (October 4, 2004) - Today at the American Dietetic Association's 2004 Food & Nutrition Conference & Expo in Anaheim, Calif., Dr. Barbara Levine, a registered dietician and professor of nutrition at Cornell University, discussed the recommended treatement for Complex Carbohydrate Intolerance (CCI), a condition she recently identified in a paper published in the latest edition of Nutrition In Clinical Care.
Affecting millions of Americans, CCI is caused by a deficiency of the intestinal enzyme, alpha-galactosidase, which results in the incomplete digestion of complex carbohydrates, such as vegetables, legumes, whole grains, cereals, nuts and seeds. Symptoms of CCI include flatulence, abdominal pain, bloating, cramping, diarrhea and constipation.
Dr. Levine, lead author of the professional paper and director of the Nutrition Information Center at Weill College of Medicine of Cornell University in New York, cites in the paper that enzyme replacement therapy is the only method that targets the root of the CCI problem, an enzyme deficiency. Enzyme replacement therapy requires that alpha-galactosidase preparations be taken at the same time as ingestion of each half-cup serving of complex carbohydrate foods. The enzyme alpha-galactosidase, currently only found in Beano, is the one option that prevents formation of CCI symptoms.
I'd say using Beano might be a very wise idea!-Chris
