    Meaning of serendipity (noun)
    apparent aptitude for making fortunate discoveries accidentally
    Tonight I realised that the meal I had planned was not possible because my DH (bless him) had been peckish in the night and scoffed half of the ingredients!!

    So . . . what to do?

    I had a cooked chicken carcasse (we have already eaten the breast and leg & thigh meat) in the fridge as well as a couple of ounces of cooked spinach and about an egg's worth of a ham omelette. (why DH didnt eat that last night I don't know!!).

    So I boiled the carcasse (removed the skin which i shall fry up to make 'chicken rinds' later) in about a pint of water for an hour or so till it was reduced into a golden broth then stripped off all the shreds of meat and chopped them up.

    Then I chopped and added the spinach to the pan as well as the omelette which I shredded into thin 'noodles'.

    Added some more water and some seasonings and heated it to make the most delicious looking and tasting 'chicken & spinach noodle' soup!!

    Funny how sometimes the most unplanned 'haphazard' meals (cobbled together from leftovers which previously I would have thrown away) turn out to be 'cordon bleu' candidates!!

    Anyone else got a recipe for a 'Serendipity' meal that turned out great?

    The only problem with Seredipity meals is that you are never ever EVER able to recreate them!!

    I once made a salad dressing that was absolutely to DIE for, and it happened because the first attempt was too vinegary. I kept adding a bit of this and a bit of that and ended up with about 2 cups worth of dressing that was sooooo good, but not a clue how to recreate it.
