  • Cream Cheese Jelly (Jello) revisited.

    I gave up on sugar free jelly mixed with cream cheese ages ago - it's just too sweet when your taste buds have adapted to low carb living.

    But I'm back on it with unsweetened geletine.

    Add 4 Splenda tablets to a cup of boling water. Stir. Add sachet of geletine.

    Grate rind of one lemon into a bowl, then squeeze in the lemon juice.

    Add contents of cup and 200g (7 oz)cream cheese and whip.

    A nice clean taste that is not too sweet.

    4 servings.

    Note

    UK Splenda Tablets seem to be half the strenght of the US variety so use only two of those.

    One teaspoon sugar per tablet in UK

        Oh - how much cream cheese for that?

          yep unsweetened gelatine made to jello/jelly is legal and we have several in the recipe sections.

          do you know how your tablets compare to the American packets? they are 2teaspoons of sugar each in sweetness

                      Well, I made your recipe last night using the zest and juice of 2 small limes and they are in the fridge awaiting the verdict of my DH tonight!!
                      In the small gladware pots I use for desserts it made 5 servings.

                        OO, I hadn't thought of Lime.

                        Grapefruit? Pink Grapefruit?

                        You could also use the juice of some frozen berries - I have done that, but not for a while.

                        I too have just made another.

                        For a much richer mix you can, of course, fold in some whipped cream.

                          I dont often buy limes but they were so cheap at Lidls a few weeks ago that I couldnt resist them but I hadnt found a recipe I liked to use them in yet!

                            Been trying with more water and 1/4 teaspoon of Xanthum Gum - quiet interesting. It's possible to whip a lot more air into the mixture.

                            Just made with

                            5 UK Splenda Tablets (= 5 teaspoon sugar) dissolved in cup of boiling water added to zest and juice on one lemon and 300g (10 oz) pack of cream cheese.

                            Start whipping.

                            Add one cup cold water and 1/4 teaspoon Xanthum Gum.

                            Expands quite nicely into a light and airy mousse.

                            Tipped to two bowls - 6 generous portions, I guess.

                              wonderful, what is the brand name of the gelatin? I have an assortment of unsweetened flavorings, would those work do you think? They are very concentrated flavors
